Southwest Chicken Pasta Salad
Pasta.........................Penne pasta works well for traveling to a friend house
Cook pasta to the desired tenderness, rinse very well under cold water and coat with enough olive oil to make it shiny.

VEGETABLES
you can add or leave out any vegetables you don't like here they are:

Red Pepper
Yellow Pepper
Or Orange Pepper if you like
diced red onion
scallions diced
some tomato diced
canned or frozen corn rinsed
can of black beans rinsed very well
cilantro diced

Spices,
These will be used on your chicken breast so don't put them away just yet!

Corriander
Cumin
Salt
Pepper
Red Pepper Flakes
Lime juice ( just buy a couple of limes to squeeze)

Toss everything together and coat with enought olive oil to cover everything nicely.


Chicken Breast

Make sure your chicken is boneless and skinless and thawed.  You should always make sure chicken is cooked to 165 degrees that way you know it's done.
Using your thermometor, slide it in sideways in the chicken breast it will give you a more accurate reading.

With the chicken in a bowl cover with olive oil  and some lime juice. Add the spices above and lay on your sheetpan, pour any of the remaining juice from the bowl on top and place into your hot oven. (350ish)  this should take 20 to 25 minutes to finish cooking.

Once your chicken is done, decide if you want to have the chicken hot or cold.

Pour your pasta mix into your favorite bowl (blue looks sharp!)

Slice the chicken breast into thin strips and  place on top of your pasta.

Garnish

To garnish you can use a few lime wedges on the corner of the platter  or some hot peppers of course look real good too!
