8 oz. egg noodles (lasagne or jumbo shells can be used if prefered)
8 oz. cream cheese
4 oz. cheddar cheese
8 med-lg potatoes, peeled, diced & boiled
1 1/2 sticks of margarine
3 lg. onions
* Cook egg noodles, then rinse with cold water. * Mash potatoes with milk & butter as usual. * Add the cream cheese and cheddar cheese. * Mix well. * Melt Margarine with the onions and Saute until onion is soft & transparent. * Layer noodles in a 9x13 pan. * Put potatoes on top with onion and margarine. * Repeat layers once. * Bake at 350� F. for approx. 15 minutes, covered with alum. foil. * Remove foil and bake an additional 15-20 minutes more. * Serve !!!!
3 lbs. ground beef
1/2 sleeve saltine crackers
3 eggs
Salt & pepper, as preferred
1/2 cup ketchup
*
Mix ground beef and crushed saltine crackers in a large mixing bowl. *
Add ketchup, salt and pepper. *
Add 3 eggs to make meatloaf mold into a large loaf and put into a roaster pan. *
Add two cups of water and cover. *
Bake at 350� F. for approx. 1 hour. *
Uncover and continue baking for another 15 minutes, to allow meat to brown. * Remove from� roaster and put on platter. �
Gravy:
1 1/2 cups of water
1 cup of flour * Shake/mix in gravy maker. * Place roaster pan on the stove and heat the water until it boils. * Slowly add the flour mix while stirring.
"Don't add too fast or the gravy will thicken fast and become lumpy."
"Beef boullion can be added if prefered to color and richen the beef flavor."
* Bring to another boil and its ready! * Serve !!!
