VEGGIE SAUCE


2 lg. cans tomato sauce
1 lg can stewed tomatoes
2 Tbs olive oil
2 Tbs Italian seasoning
2 Tbs chopped garlic
1 Tbs pepper
1 Tbs salt
2 med. zucchini
1 lg. onion
3 carrots
3 stalks celery
1/2 green pepper
1/2 red pepper
1 can of lg. black olives
1/2 head of broccoli
1/2 head of cauliflower

* In large pan heat oil.
* Add spices, garlic salt pepper and stir constantly.
* Cook til you can smell the spices.
DO NOT BURN!
* Add tomatoes and sauce, then simmer for 1 hour.
* Add all the veggies.
* You can cut them up.
"I always cut them in big pieces. Haha Mom!! She cuts every thing up in little pieces...family joke!"
* Serve over you favorite pasta. It's even good to use in lasagna.

CHICKEN FETTUCCINE


2 complete chicken breasts, diced in bite sized pieces.
1 Onion
1 bag of frozen; caulifower, carrot & broccoli mix.
2 Pints cream
1 cup of parmesean cheese
1 Tbs. pepper
1 Tbs. salt
2 Tbs. olive oil
2 Tbs. chopped garlic

* Cook chicken in oil with garlic salt an pepper, over medium heat until lightly browned.
* Add veggies and stir until heated.
* Add enough cream to make the amount of sauce you need.
* Add cheese.
* Keep stirring.
* Serve over you favorite pasta.

"REE-REE'S" APPLE CRUMBPIE


4 jonathan apples peeled and sliced
1/2 cup sugar
1 tsp. cinnamon
1 pastry, in 9" or 10" pie plate

* Arrange apples in pastry filled pan.
Mix sugar and cinnamon together, and sprinkle over apples.

* Mix together:
1/2 cup sugar
3/4 cup flour
1/3 cup softened butter

* Crumble over apples.
* Bake at 400 � F for 40 minutes.

Serve hot with ice cream.
Yummmmmm!

BEEF STROGANOFF


3 lbs. London broil
1 lg. onion
1 lb. mushrooms
1 Tbs. garlic powder
1/4 cup Worstershire Sauce�
3/4 cup milk
Bottle of red cooking sherry, or your favorite wine
editors note: "A WHOLE {{hic-up}} BOTTLE ?"
2 Tbs. flour
1 cup sour cream

* Slice up meat, onions and mushrooms into bite size pieces.
* Set a large electric skillet at 350� F.
* Add meat, onions, garlic, Worstershire�, and wine.
* Cook covered for 1/2 hour, or until meat is cooked.
* Then add mushrooms.
* In a glass bowl, mix flour and milk until all the lumps are gone.
* At the side of the pan, use a whisk to add the flour and milk mixture.
* Add sour cream and return lid.
* Let simmer for 2 hours until the meat is tender.
Serve over rice or egg noodles.

"DARRECE'S" QUICK & PAINLESS
BANANA BREAD


1 cup sugar
1 egg
1/4 cup melted butter
3 mashed bananas
2 cups flour
1 tsp. soda

* Combine all the ingredients together in a bowl.
* Pour batter into 2 greased bread pans.
* Cook for 1 hour at 300� F.

MISSISSIPPI MUD PIE


Ready made chocolate graham cracker crust
2 squares simi sweet chocolate
2 cups pecans, toasted
1 small tub Cool Whip, non dairy topping
2 sm. boxes of instant dark chocolate pudding mix
2 cups milk
1/4 cup sweetened condensed milk

* Melt chocolate in Microwave.
* Add condensed milk.
* Blend well, by hand.
* Cover the bottom of crust with chocolate and milk mixture.
* Grab nuts and smooosh them into warm chocolate.
* Let cool for 15 minutes.
* Combine the 2 boxes of pudding mix and 2 cups of milk in a bowl and blend with electric mixer.

"This pudding is going to set up quickly because we're using only half the normal amount of milk.. so move fast."

* Add half of this pudding to the pie crust, smoothing it out level, atop the hardened chocolate.
* Add half the tub of Cool Whip to the remaining chocolate pudding, blending well.
* Layer that onto the pie.
* Then add a final layer using the last half of the Cool Whip�.
* Smooth it out nice and level.
* Grab another square of semi sweet chocolate and grate some over the top.

"Enjoy this yummy treat.... Forget what happens to your thighs.... LOL I did!!"

PENNSYLVANIA BBQ aka SLOPPY JOES


"Ok, first I got to tell you that, I'm not a cook who measures anything... I do all my cooking by taste... So please.. if you think I add too much of this or that, just use as much as you desire. When I was growing up, my mom always bought stuff in a can to make Sloppy Joes. But after moving to Pennsylvania, I've learned its very simple to make youself. My Recipes are for large groups... forgive me, I have a family of 7."

3 lb ground beef
1 Tbs. garlic powder
Salt n pepper, to desired taste
About 8 'glugs' of Worcestershire Sauce�
1/4 cup mustard
1 cup of katchup, maybe more
2 Tbs. sugar

* Brown your beef in a electric skillet.
* Drain fat well!
* Add everything else, mix well.
* Let simmer for at least an hour.

"The longer it simmers the yummier it gets."

* Stir every few minutes.
* Serve over a piece of bread, a bun or even mix with white rice.

SKILLET APPLE CAKE


* Preheat oven to 350� F.

Topping:

1 cup light brown sugar
1 cup chopped apples
1 cup sliced nuts, your choice
1/4 cup flour
1 tsp. cinnamon
3 Tbs. melted butter

Cake:

2 cups flour
1 tsp. baking powder
1 tsp. baking soda
1/2 cup softened butter
1/2 cup sugar
3 eggs
1/2 tsp. vanilla
1/3 cup orange juice

Glaze:
1/2 cup powdered sugar
3 tsp. orange juice

* Grease 14 inch cast iron skillet.

Make topping first:
* Combine all ingredients in a med. mixing bowl.
* Cut in melted butter.
* Put aside.

Make cake:
* In a sm. bowl, mix all the dry ingredients.
* In a lg. bowl, using an electric mixer; blend butter and sugar together.
Add eggs and vanilla.
* Slowly add dry ingredients to mixture and beat well.
* Fold in the orange juice last.
* Pour half the cake batter into the skillet.
* Then sprinkle half of the topping over it.
* Then add the last of the cake batter.
* Bake for 15 minutes.
* Remove and add the last of the topping.
* Return to oven for 25 minutes.
* Check on it after 15 minutes to make sure your oven is not cooking on the fast side.
* Let cake cool.
* Drizzle on the glaze when you are ready to serve it.

Enjoy with a big scoop of Vanilla ice cream.

"Who says you have to be Chinese?"...
STIR FRY


pork loin (either roast or Chops) sliced thin
1 med. onion
5 carrots
4 stalks celery
1/2 head broccoli
1/2 head cauliflower
1 green pepper
1 red pepper
1 sm. bunch bok choy
1/2 head chinese cabbage
1 can water chestnuts
2 large handfuls of bean sprouts
1/2 bottle teriyaki sauce
4 glugs soy sauce (I use this instead of salt so you might want to use more)
4 Tbs. minced garlic
2 Tbs. ginger
3 Tbs. red pepper oil
4 Tbs. corn starch
1 very large wok

Ok� You ready?

* Put your wok on med. heat.
* Add oil, garlic and ginger, stirring constantly so that it does not burn.
* Once you can smell it (and believe me you will), add pork.
* Cook until it is not pink.
* Now add all heavy veggies; onions, carrots, celery, bok choy, water chestnuts and cauliflower.
* Cook for about 8 minutes tossing well to blend flavor.
* Now add all the other veggies, except the bean sprouts.
* Cook until they're the way you like them.

"I prefer them to be on the undercooked side."

* Now add bean spouts, teriyaki and soy.
* Mix well to coat everything.

"Ok here is the tricky part;"

* Mix cornstarch with 1 cup of cool water.
* Then pile the veggies up on one side of the pan.
* Stir in cornstarch mix well.
"It will thicken as it cooks."
* Now mix it all together.

"And, Voila'� A masterpiece!"

* Serve over sticky white rice.

"If you don't know how to make it stick, the key is to not rinse it before cooking."

P.S. Don't forget the Chop Sticks... LOL Dad

MELT IN YOUR MOUTH ROAST BEEF


"You ever noticed how some people can make a roast so tender and some make it like leather? Well, now you will never worry again!"

4 lb. chuck roast, or rump roast
4 cups water
3 Tbs. beef base (boullion)
1 Tbs. pepper
1 Tbs. basil
1 Tbs. thyme

For gravey:
2 cups milk
4 Tbs. flour

* Preheat oven to 350� F.
In the bottom or a roasting pan, add all ingredients, except the meat.
Mix it up well.
Add the meat.
Using a turkey baster, drizzle the mixture over the roast.
Cover tightly with aluminum foil and put it in the oven to bake.

"DO NOT OPEN THE OVEN until 3 hours are up!!!"

Remove roast from the oven.

"Be careful when you remove the foil, so the hot steam doesn't burn your face."

Take the roast out and set it aside.
Put your roasting pan on the stove, over medium heat.
Mix the milk and flour together in a bowl, using a whisk so there's no lumps.
Slowly add the milk and flour mixture to the hot beef juice in the roasting pan.
Stir until it is the right thickness.

I can just smell it now, Mmmmmm
(Don't forget the horseradish)
