BANANA SNACK CAKE


1 cup butter
2 eggs
1/2 cup buttermilk
1 cup mashed banana
1 tesp. vanilla
2 cups flour
1 cup quick cooking oats
1 1/2 tesp. baking soda
1/2 tesp. salt
1 cup (6 oz.) chocolate chips
1/2 cup chopped nuts

* Heat oven to 350�F.
* Grease 13x9" pan (can use a bundt pan).
* In large bowl combine sugar,butter, and eggs; mix well.
* Stir in buttermilk, bananas, and vanilla; blend well.
* Stir in flour, oats, baking soda, and salt; mix.
* Stir in chocolate chips. Spread batter in greased pan.
* Sprinkle nuts over the top.
* Bake for 30-35 minutes (longer for bundt pan) until done.

YUMMY CROCK POT RIBS
"Only three ingredients"


3 lbs country ribs
1 can of coke
1 cup of ketchup

* Put ribs in crock pot.
* Mix together coke and ketchup, pour on top.
* Cook in crockpot all day on low.

"Meat will fall off the bone."

"As a side note: the extra sauce that was leftover...mmmm... I saved it in the fridge. Skimmed the fat off. Added some Red Hot Pepper Sauce (you could use Tabasco) to it, poured over chicken wings and baked... they were the best wings I ever ate!"

SWEET 'N SPICY CHICKEN


1 lb. boneless skinless chicken breasts, cut into 1/2-inch cubes
3 Tbls. taco seasoning
1 (11oz) jar chunky salsa
1 cup peach preserves (I couldn't find peach so I used apricot)

* Place the chicken in a large ziploc bag; add taco seasoning and toss to coat.
* In a skillet, brown the chicken in a little oil.
* Combine salsa and preserves. Stir into the skillet.
* Bring to boil..reduce heat and cover. Simmer until the juices in the chicken run clear.
* Serve over rice or noodles.

TASTY RICE BAKE


1 1/4 cups uncooked rice
1 stick margarine, melted
1 (10 oz) can French onion soup
1 (8 oz) can sliced water chestnuts, drained

* Combine rice, margarine, soup, water chestnuts and 1 1/4 cup water.
* Pour into buttered, 2-quart baking dish.
* Bake covered at 350 F. for 1 hour.

A WICKED MEATLOAF


1 (7oz) package stuffing mix, plus season packet
1 egg
1/2 cup salsa
1 1/2 lbs lean ground beef

* In a bowl combine stuffing mix, seasoning, egg, salsa and 1/3 cup water; mix well.
* Add ground beef to the stuffing mixture.
* Put into a 9x5-inch loaf pan.
* Bake at 350 for one hour.

CROCK POT: SAVORY STEAK


1 1/2 lbs. lean round steak
1 tesp. pepper
1 onion, halved and sliced
2 (10 oz) cans golden mushroom soup
1 1/2 cups hot, thick and chunky salsa

* Trim fat from steak and cut into serving-size pieces.
* Sprinkle with pepper and place in 5 to 6-quart slow cooker sprayed with vegetable cooking spray.
* Place onions over steak.
* Combine mushroom soup and salsa and mix well.
* Spoon over steak and onions.
* Cover and cook on low for 8 - 9 hours.

"Delicious with mashed potatoes. There will be a lot of gravy."

CROCK POT: ARROZ CON POLLO


3 lbs. chicken thighs (I take the skin off mine)
2 (15 oz) cans Italian stewed tomatoes
1 (16 oz) package frozen green peas, thawed
2 cups uncooked long-grain rice
1 (.28 oz) package yellow rice seasoning mix
2 (14 oz) can chicken broth
1 heaping Tbl. prepared minced garlic
1 tesp. dried oregano

* In large slow cooker sprayed with vegetable cooking spray, combine all ingredients plus 3/4 cup water and stir well.
* Cover and cook on LOW for 7 to 8 hours or on HIGH for 3 1/2 to 4 hours.

PUMPKIN BANANA BREAD


1/2 cup vegetable or canola oil
3/4 cup sugar
3/4 cup brown sugar
4 eggs
1 1/2 cups pumpkin
1 1/2 cups ripe mashed bananas
1 1/2 cup yogurt (plain or vanilla flavored)
4 cups flour
2 etsp. baking powder
2 tesp. baking soda
1/2 tesp. salt
2 tesp. cinnamon
1 tesp. ginger
1 1/2 tesp. nutmeg
1 cup chopped walnuts (optional)

*Preheat oven to 350� F.
*Grease and flour two; 8" X 3 3/4" loaf pans.
*In a large mixing bowl combine the oil, sugars, eggs, banana, pumpkin, yogurt.
*Beat until smooth.
*Sift the dry ingredients together.
*Stir the dry ingredients into the wet mixture until well blended.
*Pour batter into the prepared pans and bake for 45 minutes or until golden brown and a cake tester comes out clean.

Makes: 2 Loaves
