PUMPKIN BREAD



2 3/4 cups sugar
1 cup shortening
3 eggs
1 can pumpkin, size #303
3 1/2 cups flour
1/2 tsp. baking powder
1/2 tsp. salt
1 tsp. baking soda
1 tsp. cloves
1 tsp. cinnamon
1 tsp. nutmeg
1 tsp. allspice


* Cream sugar and shortening and add the eggs.
* Beat well and add the pumpkin.
* Set mixture aside.
* Sift the flour with all the dry ingredients.
* Add dry ingredients to the pumpkin mixture.
"This will be quite thick."
* Place in 2 well-greased loaf pans.
9 5/8" x 5 1/2" x 2 3/4 "
* Bake at 325� for 1 hour and 15 minutes.

HINT: "If you don't have all the spice's on hand, buy a can of the pumpkin pie spice and the cinnamon. I often use 2 tsp. of the pumplin pie spice, and 1 tsp. of cinnamon. It works just great and is so goooooooood."

MANDARIN ORANGE SALAD


"I use this as a dessert"


60 Ritz Crackers�, crushed
1/4 cup sugar
1/4 cup margarine or butter


* Mix together.
* Make a crust, and press in bottom of 9x13 pyrex pan.
* Reserve 1 cup for topping.


Mix:

1 can Eagle Brand Milk�
1 - 8 oz. Cool Whip�
6 oz. concentrated orange juice
2 - 11 oz. cans mandarin oranges, drained


* Mix, do not whip, pour into crust and top with crumbs.
* Refrigerate.
* This can be made a day before serving.

LAYERED SALAD



1 pkg. fresh spinach
1 head lettuce
1 lb. bacon
1 pkg. frozen peas
4 green onions
6 hard-boiled eggs
1 cup mayonnaise
1 cup Miracle Whip�
Swiss Cheese


First layer (bottom):

* Place 3/4 package of spinach, washed and torn into small pieces, on bottom.


Second layer:

* Place part of head of lettuce, washed and torn into small pieces, on top of spinach.


Third layer:

* Place bacon, fried and crumbled, on top of lettuce.


Fourth layer:

* Place frozen peas, thawed but not cooked, on top of bacon.


Fifth layer:

* Place green onions, sliced, on top of peas.


Sixth layer:

* Place hard-cooked eggs, sliced, on top of peas.


Seventh layer:

1 cup mayonnaise
1 cup Miracle Whip�


* Combine these and place on top of eggs.


Eighth layer (top):

* Place grated Swiss cheese on top of all.
* Refrigerate overnight.
"I use a large round and very deep glass bowl for this."

Option:

"You can add things on top of the fifth layer,ie; carrots, celery, green pepper or mushrooms."

CHICKEN or TURKEY SUPREME



2 cups turkey or chicken, cooked and cut in bite size pieces.
2 cups uncooked macaroni
2 cans cream of chicken soup
2 cups milk
1/2 cup onion, finely chopped
1/2 tsp. salt
1/4 tsp. pepper
3 Tbsp. butter


* Combine all together, put in a 9x13 greased casserole.
* Top with 1 cup of grated cheese
"Use your favorite."
* Refrigerate overnight.
* Bake 1-1/2 hours at 350�.
"I do not preheat the oven when I bake this, as the dish is cold."

CHOCOLATE OAT DROPS


"Here is one of my favorites. It's so easy to fix ahead of time for family or company."


2 cups sugar
1/2 cup milk
1/2 cup butter or margarine
3 cups quick cooking oats
1/2 cup peanut butter
"I prefer the chunky."
1/4 cup cocoa
1 tsp. vanilla extract


* Place sugar, milk and butter in a 2-quart glass casserole dish.
* Microwave 3 to 5 minutes or until mixture comes to a boil.
* Stir in remaining ingredients until well blended.
* Drop by teaspoonfuls onto wax paper.
* Refrigerate until firm.

BARBECUED STEAK



1 cup ketchup
1/2 cup water
1/4 cup vinegar
1/4 cup green pepper, chopped
1/4 cup onion, chopped
1 1/2 Tbsp. Worcestershire Sauce�
1 Tbsp. prepared mustard
2 Tbsp. brown sugar
1/2 tsp. salt
1/8 tsp. pepper
4 lbs. round steak, cut 1/2 inch thick


* Combine all ingredients except round steak in a saucepan.
* Bring to a boil, then simmer gently for about 5 minutes over low heat.
* Keep barbecue sauce hot.
* Pound steak and cut into serving-size portions.
* Place pieces in a large roasting pan.
* Pour hot sauce over meat.
* Cover tightly and bake in moderate oven at 325� F. for 1 1/2 - 2 hours.

Makes 8 - 10 servings.

"This is easy to bake and one I often made and carried to the field for the men at harvest time. Meat is fork-tender for easy eating."

CHICKEN IN THE OVEN



6 chicken breasts
1 can cream of mushroom soup
1 can cream of chicken soup
1/2 cup diced onion
3/4 cup American cheese
3/4 tsp. sage


* Mix soups, onion cheese & sage together.
* Pour over chicken breasts.
* Cover and bake for 1 hour at 350� F.

"Some pimento diced and drizzled over the chicken gives it a festive look."

STUFFED, CREAMED EGGS



EGGS:

8 hard-cooked eggs
1/4 cup butter
2 1/2 tsp. dry mustard
1/2 tst. Worcestershire Sauce�
1 tsp. parsley, minced
1/2 cup+ bacon, fried and broken
or 1/2 cup chopped ham.


* Cuts eggs in halves; remove yolks.
* Mash and mix yolks with above ingredients, just as you would do if making deviled eggs.
* When the eggs are stuffed, put in a casserole.


SAUCE:

3 Tbsp. butter
3 Tbsp. flour
1/2 tsp. salt
1/4 tsp. pepper
1 cup cooked chicken, chopped
3/4 cup thin cream
1 cup American cheese, grated


* Melt butter.
* Add flour, salt, pepper, chicken and cream.
* Pour over eggs.


CRUMB TOPPING:

1 cup soft bread crumbs
8 Tbsp. butter, melted


* Toss bread crumbs in the melted butter.
* Cover the eggs with crumb mixture.
* Cover with aluminum foil.
* Bake at 350� F.
* After 15 minutes remove foil, and continue baking for 5 -15 minutes, until golden brown.

TOP-Of-STOVE ASPARAGUS

3/4 cup water
3/4 cup milk
1 tsp. salt
3 cup fresh aspagarus, cut
2 cup carrots, sliced
1/2 cup onion, sliced
1/4 cup celery, diced
1/4 cup green pepper, diced
1 Tbsp. butter, melted
1/4 cup cracker crumbs
(saltine or soup)
1 cup American cheese, shredded


* Bring water and milk to a boil.
* Add salt, asparagus, carrots, onion, celery and green pepper.
* Simmer, covered for 20 minutes until vegetables are tender,yet crisp.
* Toss butter and cracker crumbs together.
* Add cheese.
* Sprinkle this over the top of vegetables.
* Cover and heat, just until cheese is melted.
* Use a slotted spoon to serve.

SERVES: 6 - 8

"It's a wonderful potluck dish or makes a good meatless meal served with rolls and salad."

ICE BOX ROLLS



2 cups milk
1/2 cup sugar
1 tsp. salt
1/2 cup mashed potatoes
1/2 cup butter
1 tsp. baking powder
4 to 5 cups flour
1 package yeast
1/2 tsp. baking soda


* Put first 5 ingredients in a pan and bring to a boil.
* Let cool to room temperature and add yeast, baking powder, soda and enough flour to make a stiff batter.
* Let this rise 15 minutes, add more flour to make a stiff dough.
* Knead, cover dough and put in refrigerator, 24 hours before using.
Dough can be kept for 3 weeks.
* Take from refrigerator and shape into rolls.
* Let rise 1 hour or until light.
* Bake 400� F. for about 10 minutes or until lightly browned.

"Can be used for plain rolls or cinnamon rolls.

CHIPPED BEEF DIP



8 oz. cream cheese, softened
1 (2 1/2 oz.) jar dried beef, finely snipped
2 Tbsp. minced onion
1/2 cup sour cream
1 Tbsp. milk
1/4 cup chopped walnuts
2 Tbsp. green pepper, finely chopped
1/8 tsp. pepper


* Blend cream cheese in milk.
* Stir in dried beef, onion, green pepper and mix well.
* Add sour cream.
* Put into 8 inch pie pan or small baking dish.
* Sprinkle walnuts over top.
* Bake at 350� F. for 15 minutes.

LEMON WINE CAKE



1 pkg. lemon cake mix
1 pkg. (4 1/2 oz.) lemon instant pudding mix
4 eggs
1/2 cup oil
1 cup white wine
1 Tbsp. lemon peel, grated
1/2 cup chopped nuts


* Combine all ingredients, beating well.<br> * Put in greased 2 qt. "bundt" or other suitable pan.
* Bake at 350� F. for 45-55 min.
(If baked in cake pan; 35 min.)
* Cool for 10 min. in "bundt".
* Turn onto rack.
* Glaze with confectioner's sugar and milk. ( 1 cup sugar - 2 Tbsp. milk.)

BAKED CHICKEN SANDWICHES



16 slices of textured white bread, remove crusts
1/2 cup butter
1/4 lb. fresh mushrooms
2 Tbsp. butter, to saute mushrooms
2 cups cooked chicken, cubed
3 hard cooked eggs, chopped
1/3 cup ripe olives, sliced
3/4 cup mayonnaise
2 Tbsp. onions, chopped
1 - 10 1/2 oz. can cream of chicken soup
1 cup dairy sour cream
2 Tbsp. sherry
paprika


* Butter both sides of bread.
* Place 8 slices in buttered 9 x 13 inch pan.
* Saute mushrooms in butter.
* Cover bread with mixture of chicken, eggs, mushrooms, olives, mayonnaise and onions.
* Arrange remaining 8 slices of bread on top of mixture.
* Combine soup, sour cream, sherry and pour over top.
* Sprinkle with paprika.
* Bake 30 minutes at 325� F.

NICE COOKIES



"This is a wonderful cookie dough, if you like to make the roll and cut out cookies. This dough handles so very good."

3 tsp. baking powder
1 cup butter
4 eggs
2 cups sugar
flour, enough to make a soft dough (about 5 cups)


* Cream sugar and butter.
* Add beaten eggs, flavoring of your choice, and the flour.
* Mix well.
* Roll out and cut.
* Bake on greased sheet at 375� F. for 12 - 15 min.

SUGAR COOKIES



1 cup powdered sugar
1 cup sugar
1 cup oil
2 eggs
5 cups flour
1 cup margarine
1 tsp. cream of tartar
1 tsp. baking soda
1 tsp. vanilla
1/2 tsp. almond extract (optional)


* Cream sugars, margarine and oil.
* Add well beaten eggs.
* Add dry ingredients which have been sifted together.
* Add extracts.
* Mix well.
* Drop by spoonsful onto ungreased cookie sheet.
* Flatten with glass bottom that has been dipped in sugar.
* Bake in 350� F. oven about 12 minutes.
* Sprinkle on a little cinnamon for variety.

YIELD: about 7 dozen cookies.

APPLESAUCE OATMEAL COOKIES



1 tsp. baking soda
1 3/4 cup flour
1/2 tsp. baking powder
1/2 tsp. salt
1/2 tsp. cloves
1/2 tsp. nutmeg
1 tsp. cinnamon
"Sift above ingredients all together."

3/4 cup shortening
1 1/4 cup sugar
1 egg, unbeaten
1 cup sweetened thick applesauce
1/2 cup raisins
1/2 cup nuts, chopped (I use pecans)
3 cups oatmeal, uncooked (I use minute oatmeal.)


* Cream shortening, sugar and egg thoroughly.
* Add flour mixture alternately with applesauce, raisins and nut meats.
* Add oatmeal last.
* Blend well.
* Drop by teaspoonsful on greased cookie sheet.
* Bake at 350� F. for about 15 minutes, until they are a light brown.

"These are very moist and yummy!"
