Chocolate Cheese cake
Ingredients 2kg Cream Cheese 200g Sugar 520g Sour Cream 64g Corn Starch 4pcs Eggs 1pcs Orange zest 3 layers Mini sponge, round 6"
Method 1. Beat the cheese until smooth, beat in the sugar, sour cream and corn starch. 2. Beat the eggs and sugar until the mixture is light, creamy and double in bulk 3. Fold the egg mixture and orange zest in the cheese mixture very gently. 4. Line the bottom of the ring with mini sponge. 5. Fold the chocolate into the batter and pour the batter into the ring. 6. Bake in hot oven (160C) approx. 30- 35 mins. |

Strawberry Mousse
Ingredients 150ml milk 1 egg (separated) 30g sugar 8g gelatine 120g whipped cream (sweetend) 100g strawberries (frozen)
Method 1. Whisk the egg yolk and sugar until creamy. 2. Boil the milk. 3. Whisk on to the egg yolk and mix well. 4. Return to a clean saucepan, place on a low heat. 5. Stir continuously with a wooden spoon until the mixture thickens. remove from heat. 6. Dissolve the gelatine with water and warm over hot water. 7. Add in the gelatine, strawberries puree and colouring to the egg mixture. 8. Gently fold in the lightly whisked cream and the stiffly beaten egg white. 9. Pour into glasses and place in the refrigerator to set. 10. Decorater with a rosette of whipped cream and a slice of glace cherry. |
