Serve this cured salmon as a chilled appetizer.

Serves 4-6

Ingredients

1 ½  lbs (680g) Salmon, fresh
½ cup / 4oz (110g) Salt
½ cup / 4oz (110g) Sugar
1 Tbsp (15g) Cracked black pepper
¼ cup (2oz/55g) Dill, fresh, chopped

 

Method

*    Blend together the salt, sugar and pepper.

*    Rub the mixture on both sides of the salmon.

*    Place the fish in a baking dish and top with the dill.

*    Cover and place in the refrigerator for 24 to 36 hours.

*    Slice thinly.

*    Serve with red onions, capers, cream cheese and bagels.
