Does wheat protien isolate thicken like regular flour? NOdue to the fact that there is no starch in this product it will not thicken foods like soups and gravy. We suggest Xanthan Gum or Guar Gum for this purpose.
Do I need to add wheat gluten to our recipes? NO. This product is wheat and therefor has natural gluten so there is never a need to add more. Which means you save money.
What if I don't like it? First off I have sent out over 100 free samples (over 60 pounds) and all I have received are rave reviewsexcept for 1 person that used old yeast to make flat bread and had a strange salty outcome but a great texture, even her non-low-carbing husband loved it, salty and all. So the lesson here would be don't use outdated yeast lol. The final outcome of your cooking is really on you and your recipe, this product is simply a base. The FDA labels this as an off white to yellowish bland tasting wheat powder. So any off taste would have to be from the ingredients you have added. Now the part you won't like, but must understand before you order: 1. Because this is a food product, public health laws do not allow for return of opened food products, due to the fact that once the product leaves our plant and you receive the product we cannot control your handling or storage of the product. 2. Because this is a co-op and you are buying this at cost with a small amount of labor added in, we don't have the money in the form of profits to reimburse money. We would be happy to replace the product with the same unused amount after testing, but you will be responsible for all postage, for return of the product to us and also the replacement product to you.
What is the shelf life of the powder and how should I store it? The product has a 6-month shelf life and must be stored in the refrigerator in an airtight container. It should never be left on the counter, as with soy or nut flours or flax seed meal the oils may turn rancid after a while at room temperatures.
