Dottie's version of Dobies Muffins
Makes 12 muffins  
4.55 carbs total so about .33 carbs each...wow that is low

I just made them subbing the wheat protein isolate for the soy protein powder in the original recipe, and they were much lighter and fluffier! I make them with just 2 packs of sweetener because I like them not too sweet, and these turned out great...but most people may like them sweeter so taste the batter and adjust accordingly.

1 cup ground flax                                      0 carbs after fiber deduction
2 large eggs                                              1.6 carbs
1/2 cup WPI                                             .75 carbs
1tsp baking powder
1 tsp banana extract
2 packs splenda                                         2 carbs
2 T canola oil
pinch light salt
1/2 - 3/4 cup water(it needed more because of the WPI I think)

Preheat oven to 350f. Spray a 12 muffin tin with Pam cooking spray.
Beat eggs with a fork and add water, sweeteer, salt and oil -beat then stir in everything else. Bake at 350f for 25-30 minutes.
Approx 1g carbs per muffin!
