Mexican Food

Mexican food and nutrition is all about the beans and the corn. beans high in fiber and vegetable protein. Corn made into dough called masa used to make las famosas tortillas and bread. Some well known dishes are: burritos, chilaquiles, enchiladas, fajitas quesadillas, tacos, and tostadas.

  • Burritos:contains stuffing of beans ,meat, rice, chile,etc., rolled in a flour tortilla.
  • Chilaquiles:strips of fried tortillas, layered with chile sauce, cheese, tomatoes, and onions.
  • Enchiladas:either rolled in a corn or flour tortilla in tomato sauce and stuffed with cheese.
  • Fajitas:grilled meat wrapped in flour tortillas with bell peppers and onions.
  • Quesadilla:Two flour or corn tortilla stuffed with cheese.
  • Tacos:either crispy or grilled tortilla with meat as the stuffing.
  • Tostadas:flat,crispy corn tortillas with layers of beans, lettuce, cheese, etc.
    Beef Chilaquiles
  • 1 pack corn tortillas
  • 1 cup oil
  • 1 cup of tomato sauce
  • 1 pound beef
  • a pinch of salt, pepper
  • cheese

First cut tortillas into triangular pieces, fry and crisp, and add a pinch of salt. Second heat chile sauce in pan. Third in another pan add a pinch of salt and pepper and fry the beek. Fourth add tortillas into sauce pan and layered it in a baking pan and spread cheese and beef on top of every layer. Fifth bake at 350 degrees for five minutes.


    Burrito
  • 1 (10 inch) flour tortilla
  • 1/4 cup vegetarian refried beans
  • 1 slice American cheese
  • 1 pinch ground black pepper
  • 1 teaspoon low-fat sour cream
  • 1 dash hot pepper sauce

First In a small pot heat the refried beans until they are heated through, approximately 5 minutes. Second Warm the tortilla in a dry frying pan. Third Lay the burrito on a flat surface. Place the refried bean in the center of the burrito, layer the cheese, pepper, sour cream and hot sauce over the beans. Roll the tortilla.


    Tacos
  • 1/2 tablespoon shortening
  • 1 1/2 pounds cubed stew meat
  • 1 onion, chopped
  • 1 (14.5 ounce) can stewed tomatoes
  • 2 fresh jalapeno chile peppers, seeded and diced
  • 2 chopped tomatoes
  • 1 clove garlic, minced
  • pinch salt and pepper to taste

First Melt the shortening in a large saucepan. Second add the meat until brown. Third add the onions until tender. Fourth add the canned tomatoes, jalapeno chile peppers, fresh tomatoes, garlic, and a pinch ofsalt and pepper. Fifth in low heat, cover and simmer for 30 minutes to 1 hour. (remember: If mixture is too thick, add water as needed.)


    Sopes
  • 1/2 pound beef
  • 1/2 cup vegetable oil
  • 1 canned fried beans
  • 1/2 of shredded lettece
  • 1 cup cotija cheese
  • 1/2 sliced tomato
  • 1/2 sour cream
  • 1/2 cup salsa

First 6 sopes fried in vegetable oil until golden. Second layer sopes with beans, lettuce, beef, tomato sour cream, cheese, and salsa.
