| Vegetarianism and the use of natural foods is becoming an increasingly popular lifestyle choice. It is no longer considered fanatical, but a sound nutritional option for today's society. Vegetarianism has existed since the beginning of time. Scripture records the original directive God gave regarding our diet:"And God said, Behold, I have given you every herb bearing seed, which is upon the face of all the earth, and every tree, in the which is the fruit of a tree yielding seed; to you it shall be for meat" ( Genesis 1:29 ). | There are 3 basic types of nutrients that the body needs.They are as follows: protein- for building and repair, fats- for use in cell membranes and enzymes, and carbohydrates- for energy and brain function. From this we can tell that the greatest day-to-day nutritional need of the body is for carbohydrates for energy. Any of these nutrients can be used as fuel, but of all these, carbohydrates are the cheapest and most efficiently used. Both protein and fat are not utilized completely. Thus they leave waste products which add an extra burden on the kidneys. It is also becoming increasingly well known among athletes that carbohydrates are the best fuel for strength and endurance. |
| Carbohydrates are found almost exclusivly in foods that are of vegetable origin. They are most nutritious and healthful when eaten in as natural and unrefined a form as possible. Unrefined carbohydrates will not add on those extra pounds that we all worry about so much. It is the refining process and the things that we put on our food that makes it fattening. White flour products and sugar are examples of refined foods. The butter or cheese on a potatoe , and the margarine and preserves on the whole wheat bread are what makes them fattening. So, some people choose a natural vegetarian diet because it is best suited to meet the body's needs, but why else? ... |
| People sometimes become vegetarians because of health reasons. Doctors often recommend a low fat , low cholesterol diet to their patients, especially to those with heart problems. A vegetarian diet can be very low in fat and is totally free from cholesterol. |
| Another thing that doctors recommend is a diet high in fiber. Fiber is found to be exclusively of plant origin. Foods that are especially high in fiber are : whole grain brown rice, oatmeal, whole grain cornmeal, and whole wheat products, to name a few, and mature or dried legumes such as peas and beans. Fruits and vegetables contain fiber but vary considerably in the amount they contain. Here are just a few of the benefits of fiber: it aids in digestion, and prevents many diseases such as colon cancer... Fiber helps to control blood sugar levels by slowing down glucose absorption. It also helps to lower cholesterol. |
| Some peoples and cultures are forced to be vegetarians for economic reasons. Bean protein is much cheaper than meat protein... Vegetarianism is a wise use of our natural resources. It takes less land space to provide food for a vegetarian than for a non-vegetarian. For this reason some conservationalists choose a vegetarian diet. Legumes and grains combine to make up a complete protein. What nutrients one lacks, the other has in abundance. They compliment each other. |
| There are numerous other reasons why people become vegetarians. Vegetarianism promotes longer life and slower aging. The human anatomy is made(built) to eat a vegetarian diet. Some people are vegetarians because of cosmetic reasons; it tends to produce a better complexion. Still others are vegetarians because of their great compassion for animals. Many others choose vegetarianism for various religious reasons. As disease in humans is increasing, so is disease in the animal realm, and inspection of meat is not adequate. |

| Corn Tamale Pie |
| 1 c. corn meal ( biscuits or bread dough ) 2 1/2 c. water 2 c. whole kernel corn 3/4 c. chopped ripe(black) olives 1 c. chopped onion 1/2 c. tomatoe sauce( or 3 c. canned tomatoes, omitting the 2 1/2 c. water) 1 tsp. salt Make corn meal mush of the corn meal with the water( or juice from draining the tomatoes), and salt. Simmer remaining ingredients until the onion is beginning to be transparent. Place half of the mush in a baking dish. Pour the corn/onion mixture on top of the mush. Make a third layer with the remainder of the mush. Bake at 350 degrees for 1 hour... Serves 4... |
| Yummy( kid-friendly) Oatmeal |
| 8 c. water 2 c. (Real) maple syrup 6 c. quick oats 1/2 tsp. salt 1 Tbls. cinnamon Bring water, syrup, salt and cinnamon to a boil. Add oats slowly, stirring constantly to avoid clumping. Cook and stir for 1 minute, turn off, and cover. Let sit for 10-15 min. * can add raisins if desired * |
