Slaw Topped Pork Sandwiches 2 c packaged coleslaw mix (shredded cabbage and carrots) or broccoli slaw 3 Tbs apple cider vinegar, divided 1/2 Tbs sugar 1/4 tsp celery seed 1 tsp canola oil 1/4 tsp black pepper 1/4 c onions, minced 1 med garlic clove, minced 1 c barbecue sauce, not smoke-flavored 1/4 tsp red pepper flakes, crushed 12 oz Canadian-style bacon, cut into strips 4 light hamburger buns, or rolls To prepare coleslaw, place slaw in a bowl. In a cup, stir together 2 Tbs of vinegar, sugar, celery seed, oil and pepper. Pour over beggiesand set aside while cooking pork. Coat a large nonstick skillet with cooking spray and set over med-high heat. Add onion and garlic; saute 2 minutes. Stir in barbecue sauce, red pepper flakes (opt) and remaining tablespoon vinegar. Simmer 2 minutes for flavors to blend; add bacon strips and simmer another 2 minutes to heat through. To serve, spoon about 3/4 cup of Canadian bacon mixture on bottom half of bun. Top with 1/2 cup of slaw and cover with bun tops Makes 4 servings..6 stars per serving Note: When I made this I was in the middle of cooking it when I realized I only had 5 oz of Canadian Bacon.
