| Tropical Fish Fillets added 01/15/2003 by Sarah Beth 4 servings @ 4 stars each 4 fresh or frozen orange roughy or red snapper fillets (6 oz each) 3 Tbsp flour 1 Tbsp butter 1/2 chicken broth 2 Tbsp lime juice 1 Tbsp minced fresh cilantro 1 tsp gramed lime peel 1/2 tsp ground coriander 1/2 tsp ground cumin Coat fish fillets with flour. In a large nonstick skillet melt butter and add fillets; cook over medium-high heat for 3 minutes on each side or until fish flakes easily with a fork. Remove and keep warm. In the same skillet, add the remaining ingredients, and cook for 2-3 minutes or until heated through, stirring constantly. Pour sauce over fish and serve over rice. |
