Drop on waxed paper to make 12 servings. Chill in refrigerator. Note: Use 1/55 oz. Hershey Bars or any candy bar that doesn't total more than 5 points each. Chocolate Truffle recipe added 01/15/2003 2 boxes sugar free white cocolate pudding 2 cups skim milk Fold in: 8 oz fat free cool whip 2 tsp instant coffee (dissolve in small amount of water) Topping: 4 tsp Heath Bar chips (can use any chips) 1 box Low Fat Brownie mix (like Sweet Rewards), bake according to directions in 9x13 pan. Let cool completely then cut in one inch pieces Directions: Layer bottom in glass bowl with brownies for first layer, then pudding = mixture. Repeat until all ingredients are used. You should end up with pudding = on top then sprinkle on chips. Refrigerate 16 servings, 4 1/2 points each or 12 servings, 6 points each Almond Fudge Truffles Added 01/15/2003 1/2 cup(s) unsweetened cocoa 2 tbsp unsweetened cocoa 1 cup(s) powdered sugar, sifted 1/2 cup(s) light cream cheese, at room temperature 1/2 tsp vanilla extract Reserve 2 tablespoons of the cocoa powder on a Sheet of wax paper. In a food processor or in a medium bowl, with an electric mixer on high speed, blend the remaining � cup of cocoa powder, the confectioners' sugar, cream cheese and almond extract. Drop the cream cheese mixture by rounded teaspoons into the reserved cocoa powder, making 24 truffles; roll into balls, and refrigerate until firm, 1-2 hours. Serves - 24 @ 1 star per serving Chocolate Bran Muffins Heres the recipe...recipe added 01/15/2003 1 box no pudge brownie mix 3 cups Kellogs all bran extra fiber cereal 2 1/2 cups water 1/2 TBS baking powder Soak the cereal in the water for 5 minutes then add the baking powder and brownie mix, mix well with spoon. Put into 12 muffin tins sprayed with Pam. Bake approx 35 min ( mine took 40 minutes) check with toothpick. BABY RUTHY DELITES Serves 8 2 tablespoons plus 2 teaspoons reduced-calorie margarine 1/4 cup Brown Sugar Twin 1/4 cup Peter Pan reduced fat chunky peanut butter 1 teaspoon vanilla extract 1 cup (3 ounces) quick oats 1 (4-serving) package Jello Sugar-free instant chocolate pudding mix 1 (4-serving) package Jello sugar-free instant butterscotch pudding mix 2/3 cup nonfat dry milk powder 2 cups water 3/4 cup Cool Whip Lite 2 teaspoons hershey's lite chocolate syrup Preheat oven to 375 degrees. In a small saucepan, combine margarine and Brown Sugar Twin. Cook over medium heat until margarine melts. Stir in peanut butter and vanilla extract. Continue cooking until peanut butter melts, stirring constantly. Add oats. Mix well to combine. Pat mixture into an 8 X 8 inch baking dish. Bake for 10 minutes. Perfect dessert for company!Foofysbud Chocolate Fruit Cordial Rocky Road Pie Serves 8 1 (4-serving) package Jello sugar-free chocolate cook-and-serve pudding mix 2/3 cup nonfat dry milk powder 1 cup (one 8-ounce can) crushed pineapple, packed in fruit juice, undrained 2 cups (one 16-ounce can) tart red cherries, packed in water, drained and 1/2 cup liquid reserved 2 teaspoons brandy extract 2 tablespoons (1/2 ounce) chopped pecans 1 (6-ounce) Keebler chocolate piecrust 1 cup Cool Whip Lite 1/2 cup (1 ounce) miniature marshmallows 2 tablespoons (1/2 ounce) mini chocolate chips In a large saucepan, combine dry pudding mix, dry milk powder, undrained pineapple, and reserved cherry liquid. Stir in cherries. Cook over medium heat until mixture thickens and starts to boil, stirring often, and being careful not to crush the cherries. Remove from heat. Add brand extract and pecans. Mix gently to combine. Pour mixture into piecrust. Refrigerate for at least 2 hours. In a small bowl, gently combine Cool Whip Lite and marshmallows. Evenly spread topping mixture over set filling. Sprinkle chocolate chips evenly over top. Refrigerate for at least 15 minutes. Preheat oven to 350. Spray cookie sheets with cooking cpray. Whisk together sugar, apple butter, sour cream, oil and egg substitute. In another bowl whisk together flour, cocoa, salt and baking soda. Stir flour mixture into sugar mixture; mix just until blended. Drop 42 tablespoons of cookie dough onto cookie sheets, about 1 1/2 inches apart. Bake until firm, about 10 minutes. Transfer cookies to a flat surface and cool completely. 42 cookies = 1 star per cookie Mary Jo Double Chocolate Chews 1 3/4C flour, 2/3C powdered sugar, 1/3C unsweetened cocoa, 2 1/4 tsp baking powder, 1/8 tsp salt, 1C semisweet chocolate mini chips divided, 3 tbsp vegetable oil, 1C firmly packed brown sugar 2 1/2 tbsp light colored corn syrup, 1tbsp water, 2 1/2 tsp vanilla extract, 3 large egg whites. Preheat oven to 350. Combine first 5 ingredients in a bowl, stir well and set aside. Combine 3/4C chocolate chips and vegetable oil in a small saucepan, and cook over low heat until chocolate melts; stirring constantly. Pour melted chocolate mixture into a large bowl, and let cool 5 minutes. Add brown sugar and next 4 ingredients to chocolate mixture, stir well. Stir in flour mixture and remaining 1/4C chocolate chips. Drop dough by level tablespoons 2 inches apart onto baking sheets coated with cooking spray. Bake at 350 for 8 minutes.
