Diet 7 Up Dump Cake

1 box white cake mix (no pudding in the mix)
12 oz. bag of frozen raspberries
12 oz. bag of frozen blueberries
2 cups of diet 7 UP or Diet Sprite
Preheat oven to 350 degrees. Spray a 9 x 13 baking dish with non-stick spray. Put the fruit (still frozen) in the baking dish. Mix up the box of cake mix and the 2 cups of 7 UP, it will be foamy. When I tried just dumping it all together in the pan (as the recipe recommended) I still had flour
clumps in the finished product. Pour mixture over the frozen berries. Cover the baking dish with foil and bake for 20 minutes. Uncover the cake and bake for an additional 20 to 30 minutes.
You can use any flavor cake mix and fruit that appeals to you. You may need to make some calculations as to point value if you change the type of fruit or mix. If you use chocolate cake mix use one of the dark diet colas.We served ours with a dollop of Fat Free Cool Whip.


Chocolate Bran Muffins recipe added 01/15/2003
1 box no pudge brownie mix
3 cups Kellogs all bran extra fiber cereal
2 1/2 cups water
1/2 TBS baking powder
Soak the cereal in the water for 5 minutes then add the baking powder and brownie mix, mix well with spoon. Put into 12 muffin tins sprayed with Pam. Bake approx 35 min ( mine took 40 minutes) check with toothpick.   Makes 12 regular size muffins, 2 stars eachThey  have 4 gr of fiber each so they're healthy also. Cindy:)

1pkg reduced fat chocolate cake mix
1 can pumpkin
1/2 Cup water
Mix together pumpkin, water and cake mix until smooth and lump free> Bake 15-20 min at 350 degrees.  In 12  count muffin pan
Spray muffin pan with Pam or use paper liners Sprinkle powdered sugar for extra decoration. These freeze well!


Pumpkin Spice Cupcakes recipe submitted by Frances 11/18/2002
Serve 26 @ 2 stars per serving
1 box spice cake mix (dry)
1 small can (15 oz) pumpkin
1 cup water
Mix until the consistency of cake batter. Pour into cupcake tins. Bakeat 350 for 20 minutes. If desired, "frost" with Cool Whip Free before serving.


Thought I'd send in this chocolate cake recipe - hubby loved it, in fact I made it twice this week.  I figured it out to be 3 stars. A piece.  And the bonus is you make it in one bowl and it takes just a few minutes to make!!! It's very, very moist.   Enjoy
Low-Fat Chocolate Sour Cream Cake
(9 squares)
1 cup all purpose flour
1 cup sugar
1 cup reduced fat sour cream
1 egg
3 Tablespoons unsweetened cocoa
1 tsp. Baking soda
� tsp. Salt
Preheat oven to 350.  Combine all ingredients in large bowl, mix with
electric mixer until smooth & thoroughly combined.  Pour batter into 8 inch square baking dish coated with cooking spray.  Bake for 30-35 minutes.  Cool on wire rack.Tammy




Diet Coke Cake
servings 12/24 at 3 stars each depending on the cake mix
1 Box super moist cake mix
10 oz any diet or regular soda
Just mix the cake mix and the coke ( i used vanilla cake mix with orange soda) and put in cup cake tins and bake. I found that in the 10 oz of coke (reg) that dividing that up into 12 servings would add less than a point per cup cake and it made it sweet enough you didn't need to add a point using cool whip.

Carrot Cake Bars
Servings: 12 stars=: 2
INGREDIENTS:
2/3 cup packed brown sugar
2 tablespoons stick margarine or butter, softened
3/4 cup low-fat buttermilk
1 teaspoon vanilla extract
2 large egg whites
3/4 cup whole-wheat flour
1-1/2 cups regular oats
2 teaspoons baking powder
1 teaspoon ground cinnamon
1/4 teaspoon baking soda
1/4 teaspoon salt
1 cup shredded carrot
1/2 cup raisins
Cooking spray
INSTRUCTIONS:
Preheat oven to 350 degrees. Beat sugar and margarine at medium speed of a mixer until well-blended (about 5 minutes). Add buttermilk, vanilla, and egg whites; beat
well.  Lightly spoon flour into a dry measuring cup; level with a knife.  Combine flour and next 5 ingredients (flour through salt); gradually add to sugar mixture, beating just until blended. Stir in carrot and raisins.
Pour batter into an 11 x 7-inch baking dish coated with cooking spray.  Bake at 350 degrees for 33 minutes or until a wooden pick inserted in center comes out almost clean. Cool in pan on a wire rack.




Apple Cake
Ingredients
2 large egg(s)
1/2 cup(s) sugar
1/4 cup(s) fat-free milk
2 tbsp light butter, melted
1 tbsp vanilla extract
1 cup(s) white self-rising flour, sifted
1 1/2 tbsp cornstarch
1 large apple(s), green, peeled, cored and sliced
1 tsp ground cinnamon
1 tsp sugar
Instructions Preheat oven to 400�F. Coat an 8-inch round cake pan with cooking spray.
Beat eggs and sugar with an electric mixer until light and fluffy. Stir in milk, melted butter and vanilla extract.
Combine flour and cornstarch and fold into the cake batter. Pour mixture into prepared pan.
Arrange apple slices on top of cake, sprinkle with combined cinnamon and sugar. Bake for about 30 to 35 minutes or until a knife or metal skewer comes out clean when inserted.
