Jeannie's Quiche (recipe added 11-01-2002)
4 eggs, slightly beaten
3 leeks, sliced thinly and sauteed in a Pam-sprayed skillet
1 can artichoke hearts, drained and coarsely chopped
1 8-oz. can evaporated skim milk
6 oz. Swiss cheese, grated
Directions:  Into beaten eggs, stir remaining ingredients.  Pour
into 9" Pam-sprayed pie pan.  Bake at 425 degrees for 15 minutes, then reduce heat to 325.  Continue baking 45 minutes. Makes 6 servings, 6 stars each,or 8 servings, 4 1/2 stars each.





Baked Won Ton Crisps
Yield:  4 servings (serving size = 3 crisps)
2 stars per serving
1 � tsp sesame oil (or vegetable)
1 � tsp water
12 won ton wrappers
1 � tsp sesame seeds
� tsp salt
Preheat oven to 400.
Combine oil and water; brush evenly over won tons.  Sprinkle sesame seeds and salt evenly over won tons.  Bake at 400 for 5 minutes or until lightly browned and crisp.





I made this for lunch today!  I halfed the recipe and had a 6 star. lunch!!!!  It was really good.... and I used a wheat pita! Stephanie
Fresh Tomato Pizzas
Makes 4 servings
Ingredients
2 large pitas
2 large plum tomatoes
1/4 tsp salt
2 tbsp chopped basil
2 tsp olive oil
2 garlic cloves, minced
Vegetable toppings of your choice, such as red/green pepper
strips, mushrooms, broccoli, etc.
1/3 cup shredded part-skim mozzarella cheese
Preheat oven to 400 degrees.  Spray a large nonstick baking sheet with nonstick
cooking spray.  Place the pitas on the baking sheet.  In a small bowl, mix the tomatoes
and salt; stir in the basil, oil, and garlic.  Top the pitas with the tomato mixture and
toppings.  Drizzle any liquid in the bowl over the toppings.  Bake until the tomatoes
are hot and softened, about 8 minutes.  Sprinkle with the cheese; bake until the cheese
is melted, about 3 minutes longer. Stars=  3 per serving




Mexican Rice
Serves 4   3 stars per serving
1/2 cup chopped onion
2 cups chunky salsa
1/8 teaspoon black pepper
2 cups cooked rice
1 cup Kraft shredded reduced fat cheddar cheese
Preheat oven to 350.  In skillet sprayed with cooking spray, saute onion until tender, about 5 minutes.  Add salsa and pepper.  Mix in rice and 3/4 cup cheddar cheese.  Stir until cheese is melted.   Pour into an 8 x 8 baking dish sprayed with cooking spray.  Bake 15 minutes.  Sprinkle remaining 1/4 cup Cheddar Cheese on top and bake an additional 5 minutes or until cheese melts.
HINT:  1 1/3 cups uncooked rice, usually make about 2 cups cooked.
