| Raspberry Icebox Dessert (recipe added 11-01-2002) 12 servings @ 3.5 stars each 2 packages (3 oz each) of sugar-free raspberry JELL-O 2 cups boiling water 3 cups fresh or frozen raspberries 2 cups graham crackers crumbs 1/4 packed brown sugar 1/2 cup brummel and brown, melted 1-1/2 cups cold, skim milk 1 package (3.4 oz) instant fat-free vanilla pudding 1 package (8 oz) fat-free cream cheese In a bowl, combine gelatin and water, stir until gelatin is dissolved. Fold in the raspberries. Refrigerate for 1 hour or until syrupy. In a small bowl, combine the cracker crumbs, brown sugar, and Brummel & Brown. Press into a greased 9X13" pan. In a mixing bowl, beat the milk and pudding mix on low speed for 2 minutes. In another mixing bowl beat the cream cheese until smooth. Gradually add pudding. Spread over crust. Spoon gelatin mixture over the top. Chill until set. Refrigerate leftovers.Sarah Beth SLUSHIES 1 pkg. (4 oz. serving) sugar free jello any flavor 1 C. boiling water 2 C diet ginger ale, sprite, etc (any flavor diet soda) Dissolve Jello in boiling water. Add diet soda and pour into an 8 inch square pan. Freeze until firm, 4 hours or overnight. To serve, use an ice cream scoop to fill serving dishes, paper cups or ice cream cones. 4 servings 0 stars WATERMELON PIT PARFAIT 2 c Thawed Cool Whip Free Whipped Topping 5 drops green food coloring 1 C. boiling water 1 pkg. (4 serving size) sugar free Jello watermelon 2 C. Ice cubes 2 Tbsp Baker's miniature semi-sweet chocolate chips Mix whipped topping with food coloring. Spread green topping evenly inside 4 dessert dishes to make "rind". Place in freezer while preparing jello. Add boiling water to jello dessert. Stir until completely dissolved. Add ice cubes. Stir until slightly thickened, 3 to 5 minutes. Remove any unmelted ice. Spoon into prepared dessert dishes. Poke chocolate chips into jello to make "seeds" Chill 30 minutes. Serves 4 - 3 stars/serving WIGGLY BANANA SPLITS 1 pkg (4 oz. serving size) sugar free Jello Watermelon or Strawberry-Kiwi 1 C. boiling water 1 pkg Jello vanilla instant pudding (sugar free) 4 small bananas, peeled and sliced lengthwise 1 C. thawed Cool Whip Free Whipped Topping 4 maraschino cherries Dissolve jello in boiling water. Add cold water. Pour into and 8 inch square pan. Refrigerate until firm, about 3 hours. Prepare pudding as directed on package Cut Jello into small cubes. Place a few cubes on bottom of each dish. Top with some of the pudding. Top with sliced bananas, more pudding, cubes, whipped topping and cherries. Serves 4 @7 stars per serving CREAMY MOUSSE DELIGHT 1 pkg (4 serving size) Sugar Free Jello instant pudding (any flavor) 2 C. Thawed Cool Whip Free Whipped Topping Prepare pudding as directed on package Fold in whipped topping Spoon into individual dessert dishes. Chill 30 minutes. Makes 6 servings/2 stars each QUICK PARFAIT 3/4 C. Boiling water 1 pkg (4 serving size) sugar free Jello Raspberry or favorite flavor 1/2 C. Cold water Ice Cubes 1/2 C. thawed Cool Whip Free Whipped Topping Pour boiling water into blender container. Add jello and blend at low speed until dissolved, about 30 seconds. Combine cold water and ice cubes to make 1 1/4 cups. Add to jello and stir until ice is partially melted, then blend at high speed for 10 seconds. Add whipped topping and blend for 15 seconds. Pour mixture into straight-sided parfait glasses. Chill until set, about 1 hours. 6 servings/0 stars CHOCOLATE ANGEL DESSERT 1 1/2 C. small angel food cake, cubed 1 C. raspberries, strawberries or sliced bananas 1 1/2 C. Cold Skim Milk 1 pkg (4 serving size) jello Chocolate instant pudding 1 C. thawed Cool Whip Free Whipped Topping Divide Cake cubes and fruit evenly among 6 dessert dishes, set aside Pour milk into medium bowl; add pudding mix. Beat with wire whisk 1 to 2 minutes or until well blended. Let stand 5 minutes. Gently fold in whipped topping. Spoon into dessert dishes. Chill 15 minutes. Serves 6 @ 4 stars per serving SUNSHINE SQUEEZE 1 pkg (4 serving size) Jello sugar free orange flavor 1 C. orange sections Prepare jello according to 30 minute set method on package Set aside 1/2 C. Chill until slightly thickened. Fold orange sections into remaining jello. Spoon into 6 dessert dishes. Beat reserved jello with mixer until double in volume. Spoon over fruited layer. Chill until set, about 30 minutes. 4 servings/ 0 stars per serving VERY BERRY 1 pkg (4 serving size) sugar free strawberry jello 1 C. thawed Cool Whip Free Whipped Topping 1 C. fresh sliced strawberries Prepare jello according to the 30 minute set method on package. Measure 1/2 C. of jello. Whisk into topping. Sppon into dessert dishes. Chill 20 minutes. Meanwhile, fold strawberries into remaining jello. Spoon over bottom layer. Chill until set, about 30 minutes. 4 servings/ 1 star per serving FRUITED SQUARES 2 pkg (4 serving size) jello strawberry sugar free or favorite flavor 1 1/2 C. boiling water 1 C. cold water Ice Cubes 2 C. thawed Cool Whip Free Whipped Topping 1 can (14 oz.) fruit cocktail in light syrup, drained. Dissolve jello dessert in boiling water. Combine Cold water and ice cubes to make 2 cups. Add to jello and stir until slightly thickened; remove any unmelted ice. Measure 1 Cup and fold into whipped topping; pour into 8 inch square pan. Arrange fruit on creamy layer, then spoon remaining jello over fruit. Chill until firm, about 3 hours. Cut into 9 squares. 9, 1/2 Cup servings/ 2 stars per serving FOAMY PEACH SNACK 1 can (14 oz) sliced peaches in light syrup 1 pkg (4 serving size) jello sugar free rapberry flavor 1/2 C. ice cubes Drain peaches, reserving juice. Add water to juice to make 3/4 cup; bring liquid to boil. Pour boiling liquid into blender container. Add jello and blend at low speed until dissovled, about 1 minute. Add ice cubes and blend low speed until ice is partially melted. Add peaches and blend at high speed until ice is melted, about 30 seconds. Pour into 6 dessert dishes.
