Syrian Meat Pies
I can honestly say you will not find this exact recipe anywhere else online... unless one of my kin have posted it. Thats true for most of these recipes, this are truely my familys recipes. This one is a favorite of mine, my hubbys and my kids. This is usually requested for birthdays and any other occasion they think they might be able to milk me to make it! I think this was one of my dads favorite Syrian foods too, this and butlaywhee! There are a few of these recipes out there, but this one is unique, its been adjusted for a milder flavor, and handed down many generations.
2 lbs ground lamb, very lean 1 lg Onion, minced 2 t Salt 1 T Lemon juice 2 T Taheni
1/2 t Alspice 1/2 Pepper 1 T Ketchup (or 1 packet) 1/2 C Pinenuts
Mix together until combined well, Fill bread rounds with 2 T of filling, spread very thin and cook on oiled cookie sheets that have been sprinkled lightly with corn meal. Cook for approx. 5 mins at 375. Meat should be browned. I make my bread dough in my bread maker, just the plain white, no egg. You will need 2 lbs. You can also buy frozen bread dough. Separate the bread into 24 small balls, you will roll the dough out into circles about the size of the bottom of a 16 oz can of coffee. The put your filling in the center, snooth it out, then bring the edges up over the meat. Watch these closely, they don't take very long to cook, the meat layer is very thin, so it will cook in the 5 mins You can use diffrent seasoning in the meat, we have even used taco seasoning and it has come out great... just be sure to use very lean meat.
