Oyster - Mushroom Stuffing
This is a combination of my mom's, and what my hubby likes! He was raised with pimiento in the dressing, and I wasn't... but its a small concession for such a sweet man! If you don't like them omit them.... if you really like them, leave them! I don't always have the oysters, so I substitute ! lb, cooked, crumbled sage or itallian sausage and omit the old bay seasoning. If you don't have piementos, add red bell pepper.
1 pint Oysters
1 1/2 chopped Celery w/ leaves
1 stick butter
1/4 C Chopped Fresh Parsley
2 t Salt
1/4 t Blk Pepper
1 lb Coarsley Chopped Mushrooms
1 C Chopped Onion
2 C Toasted Bread Cubes
2 T Diced Pimiento
1 1/2 Poultry Seasoning, or Bell Seasoning
2 Beaten Eggs
2 T Old bay Seasoning
Remove any remaining shell particles from the oysters. Drain oysters. In a skillet, sautee mushrooms, celery and onion in butter until tender, but no brown. Place in a large mixing bowl and stir in bread cubes, parsley, pimento and seasonings. Add oysters and egg to mixture. Mix throughly, if its too dry, mix in a little water, sparingly. Makes 6 Cups. Place in a well buttered baking dish. Bake at 350 for 20 minutes
