Odd Potatoe Casserole
When I first had this, it was at a church dinner, I had 2 helpings! Thanks Linda Burress for the recipe, and although she originally got a basic recipe for this off of a french fried onions can, she added to it to make it her own!
This is very Yummy, I wouldn't change a thing!
4 C Frozen Hash Browns
1 Stick Butter, Softened
1 C Montery Jack Cheese, Shredded
1/2  Garlic Powder
2 C Boiling Water
Preheat Oven to 350 degrees
1 Package Buttered & Herb Mashed Potatoes (7.6 Oz)
4 Oz Cream Cheese, softened
1/2 C Sour cream
1 t Salt & 1/2 Pepper
1 C Prepared French Fried Onions
Bring pot of water to a boil and add the hash browns. Cook for 5 minutes and drain. In a large bowl, mix together with the cooked hash browns, mashed potatoe mix, butter, cream cheese, jack cheese, sour cream, garlic powder, salt & pepper. Stir in the boiling water. Place in a greased 2 qt casserole dish. Bake for 35 to 45 minutes. Sprinkle the onion rings over the top and bake for 5 to 8 minutes more until the onion rings are browned.
