| 6 Squash (Yellow and/or Zuchhini) 1 C Rice 1 c (16 oz) Tomatoe 1 t Salt 1/2 C Pinenuts |
| 1 Sm Can Tomato Sauce 1 1/2 lbs ground meat, lean Pepper, Allspice to taste 2 T Garlic Powder Water |
| Cut the squash in half length-wise, scoop out the seeds, and cut off stems. Stuffing - Mix rice, meat, tomato sauce ands all spices & nuts together. Stuff each half with filling, but don't pack in tightly. Arrange in a pan, add tomatoes and the juices over the top of the stuffed squash. Add enough water to be even with the squash. Bring to a boil, cover, and reduce heat to med and cook for 25 minutes This same filling works great for cabbage rolls, eggplant (just the smaller ones, the big ones are too bitter) and bell peppers. We add a little onion powder and lousiana hot sause to the filling and omit the alspice. |
