| This is the best fish batter I have ever had, and I love it, although in general I am not a big fish eater. This works well with any firm white fish, especially Cat Fish. Joyce, Larry's Mom, gave me this recipe right after we were married, and I am forever greatful! |
| Veg. Oil for Frying 1 C Flour 1 t Paprika 1/4 C Flour |
| Fill a deep fryer 1/3 full of oil (Joyce uses a cast iron chicken fryer). Heat oil to 400*. Cut fish into serving size pieces. Sprinkle lightly with lemon juice. Sift 1 C flour, salt and paprikia into mixing bowl. Add beer gradually, beating until batter is smooth. Put 1/4 C flour in a flat dish and dip the fish fillets to coat on both sides. Then draw each piece of fish through the beer batter; make sure each piece is coated well. Fry in hot oil 4 minutes, turning once. Batter should be dark golden brown and crisp. Fish should be cooked throughly... smaller pieces cook faster. Drain on paper towels, serve right away. Serve with malt vinegar, tartersauce, hush puppies & cole slaw.
