| 2 Minute Fudge |
| 1 lb Confectioners Sugar 1/4 Salt 1 t Vanilla Extract 1 C Nuts, Chopped |
| 1/2 C Cocoa 1/4 C Milk 1/2 C Butter |
| In a 1 1/2 qt casserole stir sugar cocoa, salt, milk and vanilla together until patially blended (the mixture will be too stiff to throughly blend in all of the ingredients). Put butter over to, in center of dish. Microwave on high 2 minutes. Stir vigorously until smooth, if all batter has not melted during the cooking, it will as it is stirred. Blend in nuts. Pour into a wax paper lined 8x8x2 in pan (butter the pan). Chill 1 hour in fridge or 20 - 30 minutes in freezer. Cut into how ever big of pieces you want, this is real rich. |
| Peanut Butter Fudge - Substitute 1/2 C crunchy peanut butter instead of cocoa. Add peanut butter after microwaving. |
| Coffee Fondant - Prepare 2 minute fudge as above, only omit cocoa, add 1 T instant coffee and 2 t milk. Before fondant sets, shape. The easiest shape is to roll out into a log, and cut into bite size pieces, then wrap in wax paper and put in a pretty coffee cup for a gift. Or to roll them out flat, and cut out circles with a shot glass. |
