Ham Loaf
Not only great for the Holidays, this ham loaf has become a favorite "birthday meal."
Heat oven to 375 degrees.
1 lb. ground pork and 1 lb. ground ham
2 eggs
1 cup saltine cracker crumbs
1/2 can tomatoes
Milk to moisten
Mix the pork and ham and shape into 2 individual loaves. In a saucepan, combine:
1 cup brown sugar
1 teaspoon dry mustard
1/3 cup vinegar
1/2 cup water
Bring to a boil, pour over the meat. Bake 1 hour basting several times.
Serves 6 - 8
Dinner in a Pumpkin

This is a great way to use an extra pumpkin and prepare
   dinner without making a mess! Makes 8 to 10 servings.
1 medium sugar pumpkin
1 1/2 pounds lean ground beef
1 onion, chopped
1 clove garlic, minced
1 1/2 teaspoons white sugar
1 1/2 teaspoons Italian seasoning
1 1/2 teaspoons salt
1/8 teaspoon ground black pepper
4 cups tomato juice
3 cups shredded cabbage
1/2 pound fresh green beans,
   washed and trimmed
1 cup uncooked white rice


Directions
1 Preheat oven to 350 degrees F (175 degrees C).
2 Wash pumpkin, cut off top, scrape out seeds and discard.
3 Place hamburger in a large, deep skillet. Crumble and
   cook over medium high heat until evenly brown. Drain fat,
   add onion and garlic; saute slightly.
4 Add sugar, Italian herbs, salt, pepper, tomato juice
   and rice; mix thoroughly.
5 Layer inside of pumpkin with 1/3 of cabbage, green
   beans and beef and rice mixture. Repeat layers, replace lid
   and bake for 2 to 3 hours.

Fried Pumpkin

Use that extra pumpkin to make a rich and buttery side
   dish with a delicious crusty coating. Makes 6 to 8
   servings.
1 small sugar pumpkin
salt and pepper to taste
1/2 cup all-purpose flour
1/4 cup butter


Directions
1 Cut pumpkin in half, remove seeds, pith and outer skin.
   Cut into 2x3 inch pieces.
2 Place 1/2 of pumpkin (2 to 3 pounds) in large bowl and
   season with salt and pepper. Add flour and stir to evenly coat.
3 Melt butter in a large deep skillet over medium heat.
   Add pumpkin and cook, turning often until golden brown and tender.

Easy Beginner's Turkey with Stuffing
This easy to make turkey is great for beginners, but
   experts will find it equally delicious. Adjust the cooking
   time for different sized birds. Prep Time: approx. 30
   Minutes. Cook Time: approx. 4 Hours . Ready in: approx. 4 Hours
   30 Minutes. Makes 1 - turkey (12 servings).
  
12 pounds whole turkey
1 (6 ounce) package dry bread
   stuffing mix
1 cup water
1 tablespoon butter
1 cup chopped celery
1/4 cup chopped onion
4 slices toasted white bread,
   torn into small pieces
salt and pepper to taste
2 tablespoons vegetable oil


Directions
1 Preheat oven to 350 degrees F (175 degrees C). Rinse
   turkey, remove giblets and place in a shallow roasting pan.
2 Prepare stuffing according to package directions. Mix
   in water.
3 Melt butter in a medium saucepan over medium heat, and
   slowly cook and stir the celery and onion until tender.
4 Mix celery, onion, and toasted bread pieces into the
   stuffing, and season with salt and pepper. Loosely scoop
   stuffing into the turkey body cavity and neck cavity. Rub the
   exterior of the turkey with vegetable oil.
5 Loosely cover turkey with aluminum foil, and roast 3
   1/2 to 4 hours in the preheated oven, until the thickest
   part of the thigh reaches 180 degrees F (85 degrees C) and
   the interior of the stuffing reaches 165 degrees F (70
   degrees C). Remove foil during the last half hour of cooking
   to brown the bird.

Apple and Pecan Stuffing

A simple, sweet stuffing that may be used as a side dish,
   or to fill the bird. Prep Time: approx. 15 Minutes. Cook
   Time: approx. 35 Minutes. Ready in: approx. 50 Minutes.
   Makes 6 servings.
 

1 (6 ounce) package dry bread
   stuffing mix
3/4 cup finely chopped pecans
2 apples - peeled, cored and chopped


Directions
1 Prepare stuffing mix according to package directions.
2 Preheat oven to 325 degrees F (165 degrees C).
3 Mix pecans and apples into the stuffing.
4 Bake uncovered in the preheated oven 35 minutes, or
   until lightly browned.

Potato Casserole

This recipe is nice to use when you have a lot of
   Thanksgiving turkey leftover and run out of leftover recipe ideas.
   You can add chopped ham, turkey or make it meatless. This
   dish is so versatile it is good anytime of the year. Makes
   10 servings.

2 (2 pound) packages frozen
   hash brown potatoes
1/2 cup chopped onion
2 (10.75 ounce) cans
   condensed cream of chicken soup
1 (10.75 ounce) can condensed
   cream of mushroom soup
2 tablespoons chopped fresh chives
1/4 pound butter, melted
1 (8 ounce) container sour cream
1/2 cup shredded sharp
   Cheddar cheese
1 tablespoon bacon bits (optional)
1/2 cup crushed potato chips


Directions
1 Preheat oven to 350 degrees F (175 degrees C).
2 In a six quart casserole dish, mix together the
   hashbrowns, onion, chicken soup, mushroom soup, chives, butter,
   sour cream and cheese. Bake covered for 45 minutes.
3 Remove from oven, sprinkle with bacon and potato chips.
   Bake uncovered for 15 to 25 minutes.
