Pete's Chicken Fried Rice:
About 2 cups cubed chicken
1.5 cups uncooked rice
1 coarsely chopped onion
1/2 cup of peas (mainly for color and frozen works fine)
3 cups of chicken broth
2 slightly beaten eggs
3 tablespoons of soysauce

Combine chicken and soy sauce in a little bowl and allow to stand for about 15 minutes.  Brown rice using oil in a skillet on medium heat till golden brown.  Reduce heat and add broth, chicken with soy sauce, onions, and peas.  Simmer covered for about 10 minutes.  Then cook uncovered till rice is tender and and liquid is absorbed.  Push rice to sides of pan, and eggs into middle.  Cook the egg till almost set and blend into rice.  Serve immediatly with soy sauce.  <Note, taste the food before adding any more soy sauce.  It may be salty enough.>
Pete's Chicken Alfredo:
1-8oz lump of cream cheese
1 small wedge of parmesan cheese (
DO NOT use canned grated cheese)
1 pint of heavy cream
3/4 box of fettucine pasta
Garlic powder
1 tablespoon of butter
Salt and pepper
2 boneless skinless chicken breasts cubed.

First, start the sauce.  In a sauce pan on medium heat, add the cream, parmesan(grated or cut into small cubes), and cream cheese(cubed for ease of melting).  Add a pinch of salt and pepper.  Make sure not to scorch the sauce.  The idea is to
only melt the sauce together.  Next, throw the pasta into salted water and allow to cook.  Now for the chicken.  Place the chicken into a skillet with oil and butter to start the cooking on medium process(teflon is easiest).  Toss in about 2 pinches of salt, and 3 pinches of pepper.  Apply the garlic powder while cooking.   If the pan dries out add a bit more butter or a little more oil.  Cook till the chicken is no longer pink on the inside.  Taste, and apply any more salt/pepper/garlic powder if necessary.  Garnish with a non-pungent green herb.
Pete's Barbecued Cube Steak:
Flour cubesteak and toss into a pan with some oil.  Add a generous amount of barbecue sauce to coat.  Simmer covere until finished cooking.  Serves up especially well with mashed potatoes, and corn.  Maybe even a salad if you're not to lazy for it.
This is the meal I cook for all the females that I go to visit.
