A Medieval Drink




Ypocras:
Hippocras: A Spiced Red Wine

1/2 tsp. ginger powder (or 5 slivers
fresh ginger
Qt. good red dry wine
4 cinnamon sticks, broken in thirds 4 Blue heliotrope blossoms (for coloring)
4 grains of cardamon, coarsely ground Garnish:
1/2 C. sugar 1 lemon, cut in small slivers
1/8 scant tsp. pepper (optional)

1. Place spices in a large pot. Pour in red wine.
2. Bring the wine and spices to a boil and simmer, tightly covered, for 7 minutes.
3. Add heliotrope blossoms and slowly simmer another 3 minutes.
4. Remove all whole spices and flowers.
5. Serve warm in individual goblets; garnish each portion with a sliver of fresh lemon.
