A Medieval Drink
Ypocras:
Hippocras: A Spiced Red Wine
| 1/2 tsp.
ginger powder (or 5 slivers fresh ginger |
Qt. good red dry wine |
| 4 cinnamon sticks, broken in thirds | 4 Blue heliotrope blossoms (for coloring) |
| 4 grains of cardamon, coarsely ground | Garnish: |
| 1/2 C. sugar | 1 lemon, cut in small slivers |
| 1/8 scant tsp. pepper | (optional) |
1. Place spices in a
large pot. Pour in red wine.
2. Bring the wine and spices to a boil and simmer, tightly
covered, for 7 minutes.
3. Add heliotrope blossoms and slowly simmer another 3 minutes.
4. Remove all whole spices and flowers.
5. Serve warm in individual goblets; garnish each portion with a
sliver of fresh lemon.
