Tennesee BBQ

2 - 3 pounds pork ribs
Rub
1 Tbl spoon chili powder
1 Tbl spoon dried parsley
2 tsp onion powder
2 tsp garlic powder
2 tsp oregano
2 tsp paprika
2 tsp black pepper
1 1/2 tsp seasoned meat tenderizer

1. Combine all spices and rub into meat
2. Preheat oven to 350
3. Bake in foil lined pan for 30 minutes
4. Grill for 10 minutes per side on medium heat. Brushing as needed with sauce
Sauce
3 cups BBQ sauce
1/4 cup cider vinegar
1/4 cup honey
2 tsp onion powder
2 tsp garlic powder
dash of tabasco to taste


Turkey Brining


1 12 to 15 pound turkey
1 Turkey Roasting Bag
1 Gallon iced water
Brine
1 gallon vegetable broth
1 1/2 cup kosher salt
3/4 cup brown sugar
1 Tbl spoon black peppercorns
5 cloves of garlic crushed

1. Combine all, bring to a boil to disolve, cool
2. Place turkey, cooled brine and 1 gallon iced water in roaster bag and secure
3. Place in cooler packed with ice
4. Brine 12 to 18 hours
5. Preheat oven to 500
6. Drain, pat dry, stuff with herbs and onions, place in roasting pan on rack
7. Brush skin with vegetable oil
8. Place in 500 degree oven for 30 minutes
9. Remove turkey from oven and turn down to 350
10. Place an oiled tin foil triangle over breast and return to oven
11. Roast until breast is 161 degrees
