Clams Casino
2 Tbl spoons olive oil
1 Tbl spoon butter
1/2 cup minced onion
1/4 cup minced green pepper
2 cloves garlic minced
1 cup dry bread crumbs
4 slices bacon browned and crumbled
1/2 tsp oregano
1/4 cup fresh parsley
2 Tbl spoons parmesean cheese
Paprika
3 dozen little neck clams
1. Pre-heat oven to 450
2. Line a deep tray with foil
3. Bake clams on tray for 10 minutes or until open
4. Remove clams from shells and chop, reserving shells and liquid
5. Melt butter and oil in pan
6. Add onion, green pepper and garlic and cook till soft
7. Combine onion mixture with bread crumbs, chopped clams, crumbled bacon,
oregano, parsley and parmesean
8. Use liquid as needed to moisten stuffing
9. Stuff shells, drizzle with olive oil and sprinkle with paprika
10. Bake 7 minutes
Green Guacamole
1 large avacado
Juice of one lime
3 green onions chopped
1 jalepino, chopped with seeds removed
1 large clove garlic crushed with 1 tsp of kosher salt
1 Tbl spoon chopped fresh cilantro
1. Remove avacado from shell and place in bowl
2. Pour lime juice over avacado
3. Mash avacado with a fork
4. Combine with rest of ingredients, cover and chill for 1 hour
