Peanut Butter Dressing

Two tablespoonsful of peanut butter, four tablespoonsful cool water and one of lemon juice.  Put the peanut butter in a bowl and add the water gradually, stiffing all the time to prevent lumpiness and render the dressing smooth and creamy.  A tablespoonful each of very finely minced parsley and onion improves this.

[As stated in Juliano's Raw, non-organic peanuts are interplanted with cotton, which is very highly sprayed with toxic pesticides.  He also says that organic peanuts do not taste very good, so he substitutes something else.  If I were to use peanuts, I would only use fresh raw organic peanuts that have been freshly opened from the shell.  I grind nuts in coffee grinder, a little at a time.  I also grind sesame seeds, which could be used as a substitute for peanut butter.]
