Banana Cake
Flour 130g
Sugar 100g
Banana 1-2 (<120g)
Egg 3
Butter 100g
Tartar 1/2 tsp
Milk 15g
B.p. 1 tsp
1 tsp vanilla essence

Preheat oven to 200 C
A - Beat butter and sugar (40g) until light and fluffy, add yolk and beating well,  add banana (mashed), vanilla essence, flour, milk, b.p. Mix until well blended.
B - Beat Egg whites + sugar (60g) with an electric mixer until foamy, add tartar and continue beating whites until they cling to bottom and sides of bowl, then beat 1 minute longer.
Fold A to B gently but quickly. Do not over mix. Pour batter into pan, spreading evenly from centre out with a spoon. Strike pan several times on table to break any air bubbles. Bake in preheat oven for 40min.
