Tomato Basil Soup

TOMATO BASIL SOUP

1 TBL olive oil
1 medium onion chopped
1 can ground peeled tomatoes
5 cups vegetable or chicken stock
Salt & pepper
� cup loosely packed fresh basil, thinly sliced

Heat oil in large soup pot over medium high heat. Add the onion and cook until softened, about 10 minutes. Add tomatoes and the stock. Bring to a boil and then reduce to a simmer. Cook until slightly thickened. About 20 minutes. Season with salt & pepper. Stir in basil. Put pot in the sink & use stick blender & blend until smoothe.
