Salami - Turkey

Salami

2 lbs. Ground meat (substitute ground turkey)
1 tsp liquid smoke
� tsp coarse pepper
� tsp mustard seed
3 Tbl Tender Quick Morton�s Curing Salt
� cup water
1/8 Teaspoon Garlic Pepper

INSTRUCTIONS:
Mix all ingredients well & store in refrigerator. Mix well for three days & return to refrigerator. On fourth day mix &
pack in 1 lb. Coffee can (you can tell this is old recipe,probably cant get these now) & bake for 8 hours at 150 degrees.
Cool for 24 hours to slice. NOTE: Peppercorns may be added to this recipe. If you ever make this you will never buy Salami again (I'm told) !!
