Caribbean Marinated Kabobs

CARIBBEAN MARINATED KABOBS

Ingredients:
2 lbs. boneless H-E-B Natural Chicken Breast,* cut into 1 1/2-inch pieces
1/2 fresh pineapple, peeled, cored, and cut into 1 1/2-inch pieces
1 red onion, peeled and cut into 4 wedges, layers separated
2 red, yellow, or green bell peppers, cut into 1 1/2-inch pieces
1/4 cup each: H-E-B Orange Juice, olive oil, and chopped cilantro
1/2 teaspoon Central Market� Organics Cayenne Pepper
8 metal or water-soaked bamboo skewers

* You can also use 2 lbs. of boneless pork, firm fish filets like tuna or snapper, or seafood like shrimp and scallops.

Directions:
1. Combine chicken, pineapple, onion, bell peppers, orange juice, olive oil,
chopped cilantro, and cayenne pepper in a large zipper bag. Seal bag and turn
over several times to blend ingredients. Marinate chicken in refrigerator for 30 minutes or until ready to grill.

2. Thread the 8 skewers with pineapple, chicken, onion, and pepper pieces;
repeat order two or three times, depending on length of skewers. Cover kabobs
with plastic wrap and refrigerate until ready to grill.

3.Prepare charcoal or gas grill for cooking (375�F). Grill kabobs 8-10
minutes per side, until chicken is cooked through (juices run clear).
