Sweet & Sour Sauce
What is Chinese food with out red sauce (Sweet & Sour sauce)?
This is a good recipe to start with then develope YOUR own version of a classic.  This is simple, fast and keeps well in the fridge for a couple weeks.  No special ingredients, everything may already be in your cupboard!
Lar's Secret
Sweet & Sour Sauce
In wok or heavy pan bring to boil equal parts
(mininimum 1/4cup each)
sugar
white vinegar
Ketchup
water
stir until well blended
Boil over med heat for about 5 minutes, stirring ocassionally
finish with a pinch of salt (to taste) and soy sauce (optional)


Substitute tomato paste for Ketchup... this ingredient can
affect the entire taste of your sauce.  Find one that you like.

Also try apricot preserves for duck sauce
OR plum preserves for plum sauce...
or BBQ sauce for another twist!
To be honest, my cooking with the Wok is not traditional Chinese, or even neccesarily Asian.  But it is tasty, healthy and FUN!

    You will need:
  a wok or heavy skillet
  Oil, peanut or EV olive oil
