Jam Filled Bar Cookies
Quantity/Servings:  Serves 2-4
Ingredients:
2-3/4 cups butter                        
2 cups sugar                               
2 eggs                  
2 cups flour
2 cups chopped walnuts
confectioner's sugar
Preparation:
Soften & cream 3/4 cup butter & 1 cup sugar until smoth.
Add 2 eggs, 2 cups flour & 1 cup chopped walnuts.  Spread on greased cookie sheet (with sides) or a jelly roll pan.  Dough will be sticky.  Cover with jam (flavor of your choice) or pastry filling.

Topping:    Soften 3/4 cup butter & 1 cup sugar until smooth.
                    Add 2 cups flour & 1 cup walnuts, chopped.

Spread topping on top of jam.
Bake:
325 degrees Farenheit until lightly browned. 

Cool, cut into squares, and dust with confectioner's sugar.

Jello Knox Blox's
Ingredients:
1 Knox gelatin packet
3 small Jello packets (flavor of your choice)
3 cups hot water
1/2 pint heavy cream
Preparation:
Mix all ingredients together....the cream will rise to the top once it has chilled.  Place in 9 x 13 pan.

Chill for 2-3 hours or until firm.
