Carrot Cake
2 cups Sugar 4 Eggs 3 cups Plain Flour 2 tsps. Cinnamon 1 1/2 cups Oil 2 tsps. Baking Soda 1/3 cup Buttermilk 1 tsp. Salt 1 cup chopped Pecans 1 1/2 cups Carrots, grated 1 tsp. Lemon Extract
Beat Eggs and Sugar together. Sift Flour and Cinnamon and add alternately with Oil to Sugar and Egg mixture. Combine Soda and Buttermilk and add to Flour mixture with Lemon Extract,Salt,Pecans,and Carrots. Mix Well. Pour into a Greased and Floured Pan. Bake in a pre-heated oven at 300*F. for about 1 1/2 Hours. |
