| World's Best Bean Soup Mix Yield: 40 Servings ------MIX-MAKES TWENTY MIXES-------- 1 lb Navy beans 1 lb Great Northern beans 1 lb Pinto beans 1 lb Red beans 1 lb Dried soybeans 1 lb Yellow split peas 1 lb Green split peas 1 lb Black eyed peas 1 lb Dried lentils 1 lb Dried lima beans 1 lb Dried baby lima beans 1 lb Pearl barley ------SOUP----------------- 1 pk Bean soup mix 2 qt Water 1 Ham hock 1 1/4 ts Salt 1/2 ts Pepper 1 lg Onion; chopped 1/4 ts Chili powder 1 pt Tomatoes 1 Clove garlic; minced 3 tb Lemon juice Mix: Use 2 cup portions for soup mix packets. Store in an airtight container. World's Best Bean Soup: Rinse beans. Soak overnight in cold water to cover. Drain, mix with water, ham hock, salt and pepper. Bring to a boil; reduce heat, cover and simmer until beans are tender, about 1 1/2 hours. Add remaining ingredients; simmer 30 minutes. Remove ham hock from soup. Chop the meat and return it to the soup. Serve with homemade bread. |
