| POTATO PANCAKES 3/4 cup flour 1/2 cup milk 2 eggs 1-1/2 tbsp. sugar 1 tbsp. melted butter 1/8 tsp. baking powder 1/4 tsp. salt 1 tbsp. thinly sliced scallions, green part 2 cups shredded fresh potatoes 1. Combine all of the ingredients except potatoes in a large bowl. Beat until smooth. Stir in potatoes until well combined. 2. Heat griddle to medium-high heat; spray with nonstick cooking spray. 3. Ladle 1/4 cupfuls of batter onto griddle. Cook for about 3 minutes per side until brown. Serve with butter and syrup (also good with sour cream). Yield: 8 pancakes. |
