| HushPuppies 2 C white corn meal 1 T flour 1/2 t soda 1 t salt 1 large egg 3 T finely chopped onion 1 C buttermilk Mix dry ingredients; add beaten egg, onion, and buttermilk. Mix well. Melt enough shortening in frying pan to make it 2 1/2 inches deep. Drop batter by teaspoonfuls into hot fat, dipping the spoon first into hot fat, then into batter. Fry 6 or more hush puppies at a time. Cook until well browned on all sides. Drain on paper towels. |
