HONEY ROASTED RED POTATOES



These slightly sweet potatoes are the perfect side dish to just about any meat entree.



1 pound small red potatoes, scrubbed and quartered
2 tbsp. diced onion
2 tbsp. melted butter
1 tbsp. honey
1 tsp. dry mustard
Pinch salt and pepper



1. Preheat oven to 375�.  Lightly coat an 11x7-inch baking dish with nonstick cooking spray.  Lay potatoes in a single layer in prepared dish.

2. Combine the melted butter, honey, mustard, salt and pepper; drizzle over potatoes.

3. Bake in preheated oven for 35 minutes or until tender, stirring halfway through cooking time. 
Yield: 4 servings.
