CHEDDAR-MUSTARD MUFFINS 

Ingredients
1 cup all-purpose flour 
1 cup whole wheat flour 
1 1/2 teaspoons baking powder
1/2 teaspoon salt 
1/8 teaspoon ground black pepper 
1 cup grated extra-sharp cheddar cheese
1 egg 
1/4 cup spicy-hot prepared mustard 
1 cup skim milk 
1/4 cup canola oil  

Directions
Preheat oven to 400 degrees fahrenheit.
Spray muffin cups with nonstick cooking spray.
Measure flours, baking powder, salt and pepper
into a large bowl.
Stir to combine thoroughly.
Add grated cheese and toss with flour mixture.
Set aside.
Whisk egg and mustard together in a small bowl.
When well-mixed, whisk in skim milk and canola oil.
Pour over flour-cheese mixture.
Fold in gently, just until mixed. Do not over mix.
Use ice cream scoop to fill prepared muffin cups.
Bake for 20 - 25 minutes or until toothpick inserted
into the center of a muffin comes out clean.
Muffins should be browned around the top edges. 
Cool in pan 5 minutes, then turn onto wire rack.
Best if served warm, straight from the oven!
