Plum Pudding Ice Cream: Served at Christmas

This is a recipe I have played with over a number of years until I have it just right!

Ingredients:
1 litre of good quality vanilla icecream
1 litre of good quality chocolate icecream
1 packet of mixed fruit [250-375 grams]
1 packet of chocolate sprinkles
Cointreau or brandy about 1/2 Cup
Chopped Almonds or Macedamia nuts [optional]

Method:

Soak fruit in cointreau overnight.
Next day soften icecream until squishy, but not too soft. Combine in a large mixing bowl with fruit and chocholate sprinkles and nuts. Mix until combined but do not let icecream melt completely. You want to see ripples of vanilla and chocholate rather than a uniform colour. Refreeze.
May be served with Plum pudding or on its own.

NOTE: Do not be tempted to add marshmellows. They freeze into little ROCKS!
