Pepper Steak

1 case of beef tips
6 green peppers - chopped
2 onions - diced
garlic & herb seasoning to taste
salt & pepper to taste
Worcestershire to taste
beef bouillon

Simmer everything together.  Add roux to thicken.  Serve over rice.
Spaghetti or Goulash

10 lbs of hamburger seasoned with salt, pepper & garlic - cooked and then run through the robo coupe (can add the onions and peppers to the meat and cook instead of the sauce)

2 to 3 #10 cans of spaghetti sauce

1 #10 of mushrooms - divided between pots

1 onion chopped

1 bunch of celery chopped

3 - 4 green peppers chopped

garlic & herb seasoning or Italian seasoning

'Sweat' the veggies in vegetable oil and then add the sauce and seasonings.  Add the hamburger and put into the steamer.  With approximately 20 minutes to go, cook the noodles.  Pour the sauce over the noodles and place in the hot box until serving time.
Sloppy Joes

20 lbs of hamburger meat seasoned with salt, pepper, garlic, chopped onions

2 #10 cans of spaghetti sauce

2 #10 cans of tomato sauce

Combine 1 can of spaghetti sauce and 1 can of tomato sauce

To
each of these combined sauces, add

1 cup of brown sugar
2 T of dry mustard
4 T of Worchestershire
2 T of mild chili powder
1 T of  seasoned salt
2 cans of diced green peppers
10 lbs of cooked meat

Shepherd's Pie

1 box of mashed potatoes
5 lbs of hamburger meat, seasoned, cooked & drained
garlic to taste
corn or mixed veggies
2 large cans of Campbell's cream of mushroom soup
shredded cheddar cheese

Layer mashed potatoes, meat & veggies mixed with the soup, cheese & mashed potatoes

Bake or steam until temp is reached
Beef Stroganoff

Make 3 gallons of beef gravy (1 lb of margarine, one generous scoop of flour, one gallon of beef �stock� per gallon of gravy)

Reserve � gallon of gravy for the mashed potatoes and � gallon for the renal/lactose (no mushrooms or sour cream or wine)

Season (garlic salt& pepper) & steam 3 cases of beef cubes (� of a case for the puree and � for the renal/lactose).

To 2 gallons of gravy add, � cup of Worcestershire sauce & � cup of cooking wine (a little more to taste if desired), 2 cups of sour cream and 1 #10 can of mushrooms

Steam egg noodles (approx 2 bags).

Add the gravy to the beef (drain and reserve beef stock for soup or gravy).

Serve over the noodles
Beef Stew

2.5 cases of beef cubes (1/2 of a case for puree's)
4 gallons of homemade gravy
1 case of diced potatoes (steamed)
5 #10 cans of mixed vegetables (steam to temp)

Season and steam the beef for 3 to 4 hours.
Prepare the gravy.  Add the veggies and potatoes.  Add the beef.

Puree as needed.

Make a small pan for renals carrots only.

Make a small pan without gravy or have an 'no gravy' alternate.
