| Italian Green Beans List of Ingredients 1 can French Style Green Beans 1/2 c. lowfat cottage cheese 1 can (small) tomato sauce garlic powder onion salt oregano basil In casserole dish put in Green Beans (drained), then put cottage cheese on top of green beans. Then add seasonings to that. Top with Tomato sauce. Then you can either bake at 350 degrees for 15 to 18 minutes / or microwave on high for 3 to 5 minutes. This makes 1 serving at 2 Stars per serving |
| Vegetable Quesadillas 1 sm. onion, chopped 1 sm. zucchini, thinly sliced 1 sm. yellow squash, thinly sliced 1 clove minced garlic 11 oz. fat-free refried beans 8 fat-free tortillas 1/2 c. shredded reduced-fat cheddar salsa on the side. Coat a large skillet with cooking spray, and warm over med-high heat. Add the vegetables. Cook, stirring occasionally, until the vegetables are tender, about 7 minutes. Spread the beans evenly over the tortillas (it helps if you warm the beans first). Spoon the vegetables evenly on four of the tortillas. Sprinkle with cheese and top with the remaining tortillas. Cook in oven on 350 until tortillas are lightly brown and cheese is melted. 4 servings; 282 calories. 6 Stars a serving |
| Creamy Corn Chowder 1 small onion, chopped 1 clove garlic, chopped 1 T. butter (I usually leave this out) 2 medium potatoes, cubed 2 - 14 oz. cans chicken broth 1 can creamed corn pepper 1/2 c. half and half Place onion, garlic and butter in 2-quart microwaveable glass bowl. Cook on high for 2 1/2 - 3 minutes. Stir and add potatoes, corn, chicken broth, and pepper. Cover loosely and cook on high for 30 minutes, stirring halfway through. Remove from microwave - be careful; it's VERY hot - and add half and half. Leave cover off and cook for 3 minutes. 3 servings, 262 calories. Or, make it 6 servings, and use as a side dish. 5 Star each serving |
