| Turkey Meatloaf List of Ingredients 1.25 lbs. lean turkey breast 1 cup tomato sauce 1 cup oatmeal 1 med. onion, diced 1/2 med. green pepper, diced 2 egg whites salt and pepper to taste ketchup for topping Chop onion and gr. pepper. Then combine all ingredients. Place in loaf pan. Bake at 350 degrees for 1.5 hrs. 6 servings at 3 Stars each serving |
| Taco Soup 1 lb. ground turkey 1 onion, chopped 4 oz. chopped green chilies 1 pkg. taco seasoning mix 15 oz. corn 45 oz. chopped tomato, undrained 15 oz. kidney beans, canned, undrained 15 oz. pinto beans, canned, undrained 1 1/2 c. water Brown ground turkey and onion in skillet. Add remaining ingredients. Bring to a boil, reduce heat and simmer 15 - 20 minutes. 6 servings, 320 calories per. 6 Stars a serving |
| Lite 'n Luscious Lasagna 1 lb. chicken or turkey sausage, casing removed 1 chopped onion 24 oz. cottage cheese 10 oz. frozen chopped spinach, thawed and squeezed dry 8 oz. (2 c.) reduced-fat shredded mozzarella 1/4 c. grated parmesan 2 egg whites 2 - 26-ounce jars spaghetti sauce 9 oven-ready lasagna noodles from 8 oz. package Preheat oven to 375. Heat skillet over med-high heat. Add sausage and onion; cook until no longer pink. In bowl, combine cottage cheese, spinach, 1 c. mozzarella, parmesan and egg whites. Spread 1 c. spaghetti sauce over bottom of 13x9 baking dish. Top with 3 noodles; spread with half of cheese mixture, 1/2 of sausage mixture and 1 1/2 cups of sauce. Repeat layering with 3 more noodles, remaining cheese mixture, remaining sausage mixture and 1 1/2 c. sauce. Top with remaining noodles; spread with remaining sauce. Cover lasagna with foil. Bake 50 minutes. Remove foil; sprinkle with remaining mozzarella. Bake about 10 minutes more. Cool 10 minutes before serving. 12 servings; 285 cals, 9 g. fat 6 Stars each serving |
| Crock Pot Lasagna 1 - 1 1/2 lbs. ground turkey (preferably ground breast) 1 lg. onion, chopped 1 - 2 T. minced garlic 1 lb. mozzarella cheese (or reduced-fat if you can find it - it's hard to find around here) 12 oz. container fat-free cottage cheese 1 t. italian dressing (or 1/2 t. each oregano and basil) 8 oz. whole wheat twirly noodles, cooked al dente (I prefer to use plain no-cook lasagna noodles) 29 oz. can tomato sauce 6 oz. can tomato paste Cook turkey, onion, and garlic over medium heat. Add spices and tomato sauce and paste (you may need to add a little water if it seems too thick). Mix the two cheeses together in a bowl. In the crockpot, put about 1/4 of the meat sauce, then a layer of noodles, then a layer of cheese. Repeat layering twice, then top off with remaining sauce. Sprinkle with parmesan and cook on low for 4 - 5 hours. |
