Crock Pot Lasagna

1 - 1 1/2 lbs. ground turkey (preferably ground breast)
1 lg. onion, chopped
1 - 2 T. minced garlic
1 lb. mozzarella cheese (or reduced-fat if you can find it - it's hard to find around here)
12 oz. container fat-free cottage cheese
1 t. italian dressing (or 1/2 t. each oregano and basil)
8 oz. whole wheat twirly noodles, cooked al dente (I prefer to use plain no-cook lasagna noodles)
29 oz. can tomato sauce
6 oz. can tomato paste

Cook turkey, onion, and garlic over medium heat. Add spices and tomato sauce and paste (you may need to add a little water if it seems too thick). Mix the two cheeses together in a bowl. In the crockpot, put about 1/4 of the meat sauce, then a layer of noodles, then a layer of cheese. Repeat layering twice, then top off with remaining sauce. Sprinkle with parmesan and cook on low for 4 - 5 hours.
