Slaw Topped Pork Sandwiches

2 c packaged coleslaw mix (shredded cabbage and carrots) or broccoli

slaw

3 Tbs apple cider vinegar, divided

1/2 Tbs sugar

1/4 tsp celery seed

1 tsp canola oil

1/4 tsp black pepper

1/4 c onions, minced

1 med garlic clove, minced

1 c barbecue sauce, not smoke-flavored

1/4 tsp red pepper flakes, crushed

12 oz Canadian-style bacon, cut into strips

4 light hamburger buns, or rolls

To prepare coleslaw, place slaw in a bowl. In a cup, stir together 2 Tbs of vinegar, sugar, celery seed, oil and pepper. Pour over beggies and set aside while cooking pork. Coat a large nonstick skillet with cooking spray and set over med-high heat. Add onion and garlic; saute 2 minutes. Stir in barbecue sauce, red pepper flakes (opt) and remaining tablespoon vinegar. Simmer 2 minutes for flavors to blend; add bacon strips and simmer another 2 minutes to heat through. To serve, spoon about 3/4 cup of Canadian bacon mixture on bottom half of  bun. Top with 1/2 cup of slaw and cover with bun tops Makes 4 servings..

Pineapple-Glazed Pork Chops

4 (4 ounce) lean boneless pork loin chops, trimmed
1/4 teaspoon salt
1/4 tsp ground pepper
Vegetable cooking spray
1 (6 ounce) can unsweetened pineapple juice
2 tbsp dry sherry (optional)
2 tbsp brown sugar
1 tsp dried rosemary, crushed
1/4 tsp garlic powder

1. Press pork chops with palm of hand to flatten slightly; sprinkle with
salt and pepper.
2. Coat a large nonstick skillet with cooking spray, and place over high
heat until hot. Add chops, and cook 1 minute on each side or until browned. Reduce heat to medium-high, and cook chops 4 additional minutes on each side or until done. Remove chops from skillet; set aside, and keep warm.
3. Add pineapple juice and remaining 4 ingredients to skillet, stirring
well. Cook over high heat, stirring constantly, scraping particles that cling to bottom. Cook 5 minutes or until juice mixture is thickened.
4. Return chops to skillet, turning to coat with glaze; serve
immediately.
Yield: 4 servings.
Honey Garlic Pork Chops

Serving Size = 1 chop with 2 Tablespoons sauce

1/4 cup honey
1/4 cup lemon juice
1 clove minced garlic
2 Tablespoons soy sauce
4 - 6 oz lean pork loin chops

mix together first 4 ingredients to make sauce.  Over medium-high heat, brown pork chops in skillet until cooked through.  Remove from skillet and keep warm.  Add sauce and cook until bubbly and thicker.  Pour sauce over chops
