    Angel Hair With Creamy Pesto Sauce

      List of Ingredients

      1/4 cup pine nuts
      2 cups tightly packed fresh basil, stems removed
      2 cups tightly packed fresh spinach, stems removed
      4 garlic cloves, minced
      1 cup fat-free grated Parmesan cheese
      1/2 teaspoon salt
      1 1/2 tablespoons olive oil
      1/3 to 1/2 cup water
      8 ounces dry angel hair pasta

      Preheat oven to 350*F. Arrange the pine nuts on a cookie sheet lined with foil and roast in oven for 7 to 8 minutes. In a food processor, mix roasted pine nuts with the next 6 ingredients to form a paste. Blend in water to achieve desired consistency. Meanwhile, cook pasta according to package directions; drain and keep warm. The sauce can be refrigerated in a tightly covered container or frozen before serving, if desired. Serve pasta with sauce.

    Baked Ravioli

     2 packages (9 ounces each) refrigerated filled ravioli (any flavor)
      1/4 cup margarine, butter or spread, melted
      1/2 cup Italian-style dry bread crumbs
      1/4 cup finely shredded Parmesan cheese
      1/8 teaspoon coarsely ground pepper
      2 tablespoons chopped fresh parsley

      Heat oven to 400 degrees. Grease rectangular baking dish, 11x7x1 1/2 inches. Cook and drain ravioli as directed on package. Toss ravioli and margarine in baking dish. Mix remaining ingredients, except parsley. Toss ravioli and
      bread crumb mixture; spread evenly in dish. Sprinkle with parsley. Bake uncovered about 15 to 20 minutes or until mixture is hot and topping is golden brown. Makes 12 servings at

     Baked Ziti

      List of Ingredients

       1/2 lb. ground turkey
      1 jar Newman's Own Marinara Sauce
      8oz. penne rigati pasta
      16oz. 1 or 2% cottage cheese
      2 eggs
      2 Tb. dried parsley
      1 large clove of garlic
      4 Tb. grated parmesan cheese

      Preheat oven to 350.
      Brown turkey - drain grease; add marinara and simmer while pasta is cooking.
      Boil pasta according to package instructions.
      While pasta and sauce are cooking - in a large bowl mix cottage cheese, eggs, parsley, garlic, and parmesan cheese. When pasta is ready, drain and mix into cheese mixture. In 9x13 pan, place 1C of the marinara meat sauce. Then all of the cheese/pasta mixture. Top with remaining sauce.
Bake for 30 minutes. 6 servings at

   Chicken Salsa Pasta

     *Half a box of uncooked angel hair pasta
      *One 16 oz jar of salsa
      *One tablespoon of lime juice.
      *2 packages (6 ounces each) Louis Rich Grilled
      Chicken Breast
      *One cup of finely shredded Monterey Jack Cheese

      Put your hot water on the stove to boil. While you are waiting, put your salsa, lime juice and chicken breasts into a skillet and heat on medium high. Stir as necessary. Add pasta to water when it boils. Cook pasta approximately 4 minutes. Drain pasta and dish onto plates. Spoon salsa/chicken mixture on to pasta and cover with 1/4 cup of cheese to each serving. Serve immediately. 4 servings at

       2 cups cooked mini lasagna noodles, rinsed and drained
      1 1/2 cups chopped onion
      2 cups boiling water
      1 2/3 cups instant potato flakes
      3/4 cups Land O Lakes no-fat sour cream
      1 1/2 cups{6 ounces} shredded Kraft reduced fat cheddar cheese

      Preheat oven to 350�
      Spray an 8 x 8 baking dish with butter flavored cooking spray.
      Evenly arrange 1/2 the noodles in prepared baking dish.
      In a large skillet, sprayed with butter flavored cooking spray, saute onion for 6-8 minutes.
      Meanwhile in a large saucepan, combine boiling water and potato flakes.Mix well, using a fork.

      Fold in 1/4 cup of the sour cream.Add the cheddar cheese; mix well to combine.
      Evenly spread potato mixture over noodles.
      Layer remaining 1 cup noodles over potato mixture.
      Top with the onion.
      Cover and bake for 30 minutes.Uncover and continue baking for 15 minutes.
      Place baking dish on a wire rack and let set for 5 minutes.
      Divide into 6 servings.
      When serving, top each piece with 1 TBSP.sour cream.

    Nacho Ordinary Macaroni and Cheese

      List of Ingredients

         8 ounces uncooked large elbow macaroni
      5 ounces Velveeta Light
      1 teaspoon taco seasoning mix
      1/2 cup salsa
      1/3 cup thinly sliced green onions -- optional

      1. Cook macaroni in boiling water 9 minutes, omitting salt and fat. Drain and return macaroni to pan. Add cheese and taco seasoning, stirring until cheese melts. Stir in salsa. Sprinkle with green onions, if desired. Yield: 8 servings (serving size: about 2/3 cup).

    Penne and Tomatoes

      List of Ingredients

     1 Teaspoon Olive Oil
      1 Teaspoon Minced Garlic
      15 Oz Can Diced Italian-Style Tomatoes
      2 Cups Uncooked Penne Pasta
      1/4 Cup Parmesan Cheese -- Finely Shredded

      Preheat nonstick skillet over medium heat. Pour olive oil into hot skillet; add garlic and saute for one minute. Add entire contents of canned tomatoes to skillet, and stir in one can full of water. Bring to a boil. Add pasta and reduce heat to low . Cover and simmer for 7 minutes.

      Remove cover, stir and simmer until most of the liquid has been absorbed. Transfer to serving bowl and sprinkle with cheese. Serves 4 at

      1 Cup Uncooked Elbow Macaroni
      1 Quart Boiling Water
      1/2 Cup Skim Milk
      3 Slices Reduced-Fat American Cheese

Cook macaroni in boiling water for 7 minutes, drain, and rinse. Place cooked macaroni in microwavable medium glass bowl or casserole. Pour milk over macaroni, then tear cheese slices and sprinkle over macaroni. Cover and microwave on HIGH for 3 minutes. 4 servings at

     Teriyaki Grilled Pork

      2 (3/4 pound) Pork tenderloins

      1/2 cup low-sodium soy sauce

      1/4 cup unsweetened orange juice

      1/4 cup unsweetened pineapple juice

      2 TBS. brown sugar

      1 TBS. peeled, grated gingerroot

      2 cloves garlic, minced

      Cooking Spray



      Place pork in a large heavy-duty, ziplock baggie. Combine soy sauce and next 5 ingreds.Pour over pork. Seal bag; marinate in Fridge for 8 hours or overnight, turning bag occasionally. Remove pork from marinade, discarding marinade. Coat grill rack with cooking spray; place on grill over medium-hot coals (350 to 400�) Place pork on rack; grill, covered, 25-30 mins.or until meat thermometer inserted in thickest portion of pork registers 160�, turning occasionally.

      Yields: 6 servings
Creamy Harvest Pasta

*This recipe was passed on to me by reader Janet, and it was awesome. SOME people didn't like it because it didn't contain meat, but since they don't cook dinner most nights, we'll be having it again. Oh, and because we don't usually have white wine laying around, I used chicken broth, and it still came out really well. Yum!

7 oz. penne pasta(about 2 cups/or500ml uncooked)
2 Tbsp soft margarine (divided into 2-1Tbsp chunks)
1medium Leek, Chopped (white & pale green part only)
2 Cloves Garlic, minced
1 cup buttercup squash, peeled and cut into 1/2 inch pieces (*you could use some baby carrots instead and it would taste lovely as well)
1/4 cup dry white wine
1 tsp sage
3 tbsp flour
2 cups milk (skim works fine)
1/8 tsp nutmeg
3/4 cup grated Parmesan cheese
salt&pepper to taste
10oz. fresh spinach, cleaned & chopped coarsley/2c.approx. (*tip: rinse spinach, but then put it in a bowl full of water so the rest of the dirt comes off. you'll be amazed at how much dirt is in the bottom of the bowl when you're done.)

1. Cook pasta as usual. Drain well.

2. Melt margarine,add leeks & garlic. Saute for 5 min. Add squash, wine & sage. Cover & simmer approx. 10 min or until squash is tender. Remove cover, increase heat & stir continuously until wine evaporates-takes only a few minutes.

3. In the same saucepan used to cook the pasta, melt remaining Tbsp of margarine. Whisk together flour & milk & add to the saucepan that has the melted margarine in it. While stirring ,bring this to a boil. Remove it from the heat & whisk in the cheese & nutmeg.

4. Stir in the leeks, squash & spinach. Cook over medium heat,stirring,for about 2 to 3 min or until the spinach is wilted & tender. 5. Add the pasta & toss well. Season to taste & serve.
