EGG McMUFFIN- 4.5 stars
1 low fat English muffin*
1/4 cup egg substitute
1/2 ounce light cheese
3 slices Healthy Choice ham
Toast the English muffin.  Cook the egg in a small skillet sprayed with cooking spray; place on the toasted muffin with the cheese.  Heat the ham in the same skillet and add it to the sandwich.  *If you can find fat-free English muffins, they have only 1 point per muffin, and this breakfast sandwich is only 3.5 points.  Market Basket grocery stores have their own brand of fat-free English muffins, but I haven't found them anywhere else.

GREEK OMELET- 3.5 stars
1/4 cup egg substitute
1 ounce crumbled feta cheese
1/2 small tomato, sliced
salt, pepper and dried oregano to taste
Spray a non-stick skillet with cooking spray and heat.  Add the egg substitute.  Cover half the egg with the feta cheese and tomato slices.  Add the seasonings.  When omelet is set, fold the half without toppings over the other half and cook for another minute or so.
Makes 1 serving,

APPLE CINNAMON BREAD PUDDING- 4 stars
        1/2 cup packed brown sugar
     1 1/2 tsp. cinnamon
     1 1/4 cups skim milk
           2 eggs, beaten
           6 slices bread, cut into 1" cubes
           1 medium apple, peeled and chopped (about 1 cup)

Preheat oven to 375 degrees F.  Spray a 9" X 9" baking pan with cooking spray and set aside.

In a large bowl, combine the brown sugar and cinnamon.  Add the milk and eggs and mix well.  Stir in the bread cubes.  Let stand at room temperature to soak for about 5 minutes.  Stir in the chopped apples.  Pour mixture into the baking pan and bake for 20 to 30 minutes until the center is set and a knife inserted in the center comes out clean.  Makes 6 servings,

BUTTERMILK PANCAKES- 2 Stars each
     1 cup all-purpose flour
      2 tbs. sugar
      1 tsp. baking powder
   1/2 tsp. baking soda
   1/4 tsp. salt
      1 cup low-fat buttermilk
      1 tbs.  canola oil
      1 large egg, lightly beaten
        cooking spray

Combine flour, sugar, baking powder, baking soda and salt in a large bowl.  Mix together the buttermilk, oil and egg and add to the flour mixture, stirring until smooth.
Spoon about 1/4 cup batter onto a hot nonstick griddle or skillet coated with cooking spray.  Turn the pancakes when the tops are covered with bubbles and the edges are browned.  This recipe makes about 9 (4-inch) pancakes,

BREAKFAST
HAM & CHEESE BISCUITS- 3.5 star/serving
     1 oz. reduced fat shredded cheddar
     1 oz. low fat ham, finely diced
     4 tsp. low fat mayonnaise
     1 tbs. sweet pickle relish
     1 tbs. country-style Dijon mustard
     8 refrigerated buttermilk flaky biscuits
        (such as Hungry Jack) 

Preheat oven to 400 degrees.  In a small bowl, combine the cheese, ham, mayonnaise, relish and mustard;  stir to combine thoroughly and set aside.  Carefully separate each biscuit into 2 thin layers to make 16 biscuits, then partially separate each layer, forming a pocket.  Spoon an equal amount of the ham mixture into each pocket; crimp the edges of each biscuit to enclose the filling.  Arrange the filled biscuits on a nonstick baking sheet and bake until they are lightly browned, 8-10 minutes.  Serve immediately.  Makes 8 servings of 2 biscuits each for

2cups Frozen Hash Browns
      1cup fat free Cheddar Cheese - shredded
      8 oz Turkey Ham - diced
      1 can Mushroom slices
      2 cups Egg Beaters

      Spray 9x9 baking dish w/Pam
      Layer first 4 ingredients, beat egg beaters and add salt & pepper to taste then pour over layered mixture. Cover and let stand over night. Bake @350 for 60 minutes until center is firm..

      1 cup egg substitute
      1/4 cup shredded reduced-fat cheese (such as Sargento Light Shredded Cheese)
      2 (10-inch) fat-free flour tortillas, warmed
      1/4 cup salsa or green chile


      Instructions:


      In medium non-stick skillet sprayed with cooking spray, over medium heat, cook egg product, stirring occasionally until set. Divide egg mixture evenly between tortillas; top with cheese and salsa. Fold up tortillas over filling like an envelope. Serve immediately.

      Yield: 2 servings
