| Basic Meatloaf Source of Recipe Unknown List of Ingredients 1 1/2 pounds extra lean ground beef 1 cup tomato sauce 3/4 cup quick-cooking oats -- uncooked 1/2 cup onion -- chopped 1 egg Preheat oven to 350 degrees. Combine all ingredients and salt and pepper to taste in a bowl. Mix well. Shape to form a loaf. Bake in a large shallow baking pan about 1 1/4 hours. serves 6 at 4 stars per serving. |
| Beef and Cabbage Casserole 1 lb. lean ground beef 1 lg. onion, chopped 1/2 c. cooked instant rice 1/2 t. salt 1/2 t. pepper 1 - 10.75 can condensed tomato soup 1/4 c. water 4 cups shredded (or finely chopped) cabbage Heat oven to 400. Brown ground beef and onion in a large nonstick skillet and drain. Stir in rice, salt, pepper, soup and water. Place cabbage in a 2-quart casserole, spoon beef mixture over cabbage and bake about 45 minutes. 6 servings; 230 calories, 11 g. fat, 18 g. carbs, 16 g. protein. 6 stars |
| Mini Meat Loaves This one's pretty high in calories, so we don't have it terribly often. But sometimes you've just got to have meat loaf, and nothing else will do. 2/3 c. ketchup 1/3 c. chopped scallions 1/4 c. egg beaters 1/2 t. salt 1/2 t. minced garlic 1 1/4 lb. ground round 1/2 c. quick cooking oats Line a pan with foil. Mix all ingredients; put 1/3 c. ketchup to the side. Mix well. Shape 4 equal loaves in pan. Brush loaves with remaining ketchup. Bake 25 - 30 minutes at 400. 454 calories per loaf. 9 Stars |
