Spanish Rice

1 tsp. salt

3 c. cooked rice

1 onion, chopped

1 large pepper, chopped

2 cloves garlic, minced

1 tbs. oil

1 tsp. chili powder

1 tsp. cumin

1 c. tomatoes, chopped, or 1 c. tomato sauce

1/2 tsp. oregano

1/4 tsp. pepper

1/2 c Monteray Jack cheese, shredded

Saute onion, large pepper, and garlic in oil. Add chili powder and cumin. When fragrant, add tomatoes, salt, oregano, and pepper. When tomatoes are cooked through, stir in rice. Top with cheese and bake long enough to melt the cheese.
